Are you sure it isn't the tomatoes that don't agree with your mom? They are very acidic. If not make your own sauce just by cooking fresh chopped tomatoes slowly until most of the juice is gone and they thicken. You could use low acid yellow tomatoes also.

I have used a recipe for tomato sauce that is 2 parts pureed tomato (canned) per 1 part cheap, sweet, red wine. You boil it down-reduce it-and that is your sauce.

You could also try buying tomato sauces at health food stores that are organic and msg free. You mom might be less likely to react to those.

I know you want a tomato sauce, but try this-

on your pizza crust (whatever you choose) spread a thin layer of pesto sauce, then top with a sliced roma tomato and any cheese you like- parm or mozz. it's quite tastey!! That way you get your tomato taste, without all the extra. If she can't stomach the pesto, try an olive oil.

Buy the plain canned pureed tomatos.

Boil 6 large tomatoes til tender, cool and peel and mix them in a blender. You can boil peppers (Guajillo peppers are very mild) with the tomatoes too or put anything in it that agrees with you.
