In a spanish rice recipe, the saffron powder, chili powder, and the cumin is what gives the rice it's flavor. So without that in there, your recipe is going to taste a little bland.
What are some of the spices that you have on hand and maybe I can help you figure out something to cook...please email or im me at angel_jaylee@yahoo.com

Heat the oil in a deep frying pan on med heat. Sautee onions and garlic. Do not burn the onions. Add rice ( for every cup of rice use 2 cups of water).and brown. (season with salt & pepper or other spices)
On another burner heat 1 cup of water and dissolve desired amount of chicken bullion.
Once the rice is browned add the water with chicken bullion and remainng amount of water. (if you made 1 cup rice you would add the one cup with bullion plus one more cup of water)
You can add the tomatoes at this time and pimento if desired.
Let simmer for 1 min and turn to low heat and cover.
I usually use tomatoe sauce as well if you have it. You would add this after the rice is browned but before you add the water.

Curry powder will work if you are just looking for the right color. Ideally you would use a little saffron. There are really no rules to cooking, it is truly an art where the end justifies the means. That said, tomato sauce is going to add a lot of liquid, and will ruin the yellow color the curry gave you. I'd actually skip the curry unless you are going for a Spanish/ Indian fusion thing. I would not suggest fusion without a solid understanding of both Indian and Spanish cuisine. Anyhow, have fun with it but probably skip the curry.

If you don't have the cumin or chili powder, it won't taste the same. You could use some curry if you have that, but it still won't be the same as the chili flavor.
But to use bullion instead of broth/stock, you just boil one cup of water per cube of bullion and stir until dissolved. It is the same as broth, really. I use bullion all the time.

Melt the bullion cubes into hot water (1 cup/cube) that will make chicken stock.

All I put in my rice is chicken buillon, tomato sauce, garlic salt, onion, and water. It's a lot easier and faster. I make sure I put hot water.

To make spanish rice (or a dish that I make called Puerto Rican rice) I use a package of Sazon Goya - it comes in a box with 4 pkgs in it and you add it to your dish. There are several different flavors - I use coriander and annatto. I don't really know what it means, but it makes any rice dish taste and look sooooo good!
P.s. don't change your recipe at all - just add 1 pkg.
