My husband is Mexican! Well...for a starter how bout chips and salsa? But homemade salsa.....homemade chips would be great but I'm not sure how to do those.
Salsa- boil about 5 roma tomatoes until they start to peel and crack. drain about a cup of the water into the blender and toss the rest and put cold water over them so you can touch them to peel off the skin. put the skinless tomatoes into the blender with the hot water. cut up a piece of onion about the size of two of your fingers put them in the blender. add some garlic powder (about 2 shakes) or a real garlic just a little piece about the size of the pad of your thumb. on a skillet warm up a Chile rallado (or a suppose a jalapeño would work). when it is warmed on all sides add it to the blender. ok..now blend blend..mix!!! in a skillet poor some oil...just enough to cover the bottom of the skillet. when it's warm add the stuff in the blender and bring to a boil the salsa...and ur done!
I'm not sure what you're having for the main course..but I suggest using corn tortillas!
For dessert: Cut flour tortillas with a pizza cutter into little bite sized triangles. Cover with cinimamon and sugar and bake until crunchy....add some honey and chocolate (like the one you put on icecream). serve w/ice cream
oh....you could also do the Mexican apple salad-
get about 5 large apples and cut them into bite sized squares. add some raisans and chopped pineapple (drain the juice from canned pineapple before adding). add some pecan pieces. then add about 8 ounces of sour cream and 1/4 cup of sweetened condensed milk....mix mix mix everything together. you can add coconut pieces if you like..it sounds nasty but its good

1 package active dry yeast
2 1/2 cups warm water (110 degrees F)
2 cups all-purpose flour, unsifted
1 tablespoon sugar
In a 6-cup glass or ceramic container soften yeast in 1/2 cup warm water. Stir in remaining 2 cups water, flour and sugar. Beat mixture until smooth. Cover loosely with cheesecloth, folded into several thicknesses and let stand at room temperature until bubbly. This may take 5 to 10 days, depending upon the temperature of the room - the warmer the room, the shorter the time for fermentation. During this time, stir 2 or 3 times a day. The starter will develop a strong "sour" odor as it ferments. When fermentation has occurred, refrigerate starter until needed
1 1/2 c. brown sugar, packed
1 tsp. cinnamon
1 1/2 c. water
5 c. French bread cubes
1 1/2 c. raisins
1 1/2 c. peanuts
1 c. diced sharp cheddar cheese
Combine sugar, cinnamon and water. Boil gently until sugars dissolved. Pour hot syrup over bread cubes and toss lightly. Add raisins, peanuts and cheese. Toss until blended. Spoon into 2 1/2 quart greased casserole. Bake at 375 degrees for 15 minutes. Serve warm with whipped cream, if desired.

We really need to know what you have planned for the main, but I would suggest Nachos. You can make them yourself, or I would recommend buying good quality tortilla chips - there is enough cooking of the main course, and you can prepare the toppings etc in advance.
If you want to make the tortilla chips then they are made by slicing wheat tortillas (which you can make yourself if you really do have all day!) into triangles and then frying.
You can do this 2 ways. Either casual, where theres a big bowl in the middle, with the dips around it, (salsa, guacamole, sour cream) or the more traditional way is like this:
Lay chips out on a baking tray.
Spread each one with refried beans (you can buy in a can or make yourself)
Top with a dollop of salsa
Sprinkle with cheese and place under grill.
Sprinkle with corinader leaves.
Serve with dollops of guacamole and sour cream.
If you decide to buy shop bought salsa, liven it up with some finely chopped roasted peppers, chilli and spring onions and coriander.

Starter - chorizo quesadillas
4 large (12-inch) flour tortillas
2 cups shredded Monterey pepper Jack or smoked Cheddar
1/2 pound chorizo or andouille, casing removed and finely chopped
2 scallions, chopped
Preheat a nonstick skillet or griddle pan to high heat. Blister a flour tortilla for 20 seconds, flip. Cover half the tortilla surface with shredded cheese, bits of chorizo or andouille, and chopped scallions. Fold the tortilla in half and cook a minute longer, 30 seconds on each side, pressing down gently with a spatula. Cut quesadillas into 4 wedges and top with salsa.
Dessert: Flan
3 Eggs
1 can of La Lechera Condensed Milk
1 cup of Regular Milk
1/2 cup of Sugar
1 Tspn of 100% Pure Vanilla Extract
In a non-stick flan mold you add the sugar (evenly spread) an you leave it to cook on the stove until it reaches a dark color. Heat oven to 350 F. When you see this reaction, remove the mold from the stove and make sure that it is evenly spread so that you can leave it to cool off. Mean while, mix in a blender the 3 eggs, the La Lechera Condensated Milk, the regular milk and the tea spoon of vanilla (extra). After it is well mixed, place it in the flan mold where the cold caramel had rested. To cook, fill baking pan with 1/2 inch of warm water, and cover with a tent of aluminum foil. Bake until custards are just set, 30 to 40 minutes. Remove pan from oven, and remove custards from pan. Serve when cooled, or cover flans with plastic wrap and refrigerate until ready to unmold.To unmold, run a knife carefully around the edge of each custard. Invert onto a plate, and drizzle 1 teaspoon of coffee liqueur, if using, over each flan.

Pastel de Tres Leches
* 1-½ cups All-purpose flour
* 1 teaspoon Baking powder
* ½ cup Unsalted butter
* 2 cups White sugar (divided)
* 5 Eggs
* 1-½ teaspoon Vanilla extract (divided)
* 1 cup Milk
* ½ of a 14-ounce can Sweetened condensed milk
* ½ of a 12-ounce can Evaporated milk
* 1/3 cup Liqueur, Frangelico, Brandy or Chambord, for example (optional)
* 1-½ cups Heavy (whipping) cream
Preheat oven to 350F degrees. Grease and flour a 9x13-inch baking pan.
Sift flour and baking powder together and set aside. Cream the butter and 1 cup of the sugar together until fluffy. Add the eggs and 1/2 teaspoon of the vanilla. Beat well. Add the flour mixture to the butter mixture, 2 tablespoons at a time, mixing well until blended. Pour batter into prepared pan. Bake for 30 minutes.
When cake has finished baking, pierce it in 8 or 10 places with a fork or skewer, and let it cool. Combine the whole milk, evaporated milk, condensed milk and liqueur and pour over the top of the cooled cake. Refrigerate for at least 2 hours before serving.
Whipped Cream Topping: When ready to serve, combine the whipping cream and the remaining 1 teaspoon of vanilla and 1 cup of sugar, whipping until thick. Spread over top of cake.
Because of the milk in the cake, it is very important that you keep the cake refrigerated until ready to serve. Serve chilled.

Mexican Layered Dip:
INGREDIENTS
1 (16 ounce) can refried beans
1 (1.25 ounce) package taco seasoning mix
1 large tomato, seeded and chopped
1 cup guacamole
1 cup sour cream, room temperature
1 cup shredded sharp Cheddar cheese
1/2 cup chopped green onions
1/4 cup chopped black olives
DIRECTIONS
Spread refried beans in the bottom of a (1-quart) shallow edged serving dish (you can use a transparent dish if you'd like). Sprinkle the seasoning packet over the beans. Layer the diced tomatoes over the beans, the sour cream over the tomatoes, and the guacamole over the sour cream. Sprinkle the entire layered dip with cheddar cheese, followed by green onion and finishing it off with a layer of black olives. Cover and refrigerate until ready to serve.
Sopapillas:
SOPAPILLAS
1¾ cups sifted all purpose flour
2 teaspoons baking powder
1 teaspoon salt
2 tablespoons shortening
2/3 cup cold water
Stir flour, baking powder, and salt into a mixing bowl,
add shortening and cut in coarsely. Add water gradually, mixing just enough to hold together as for a pie crust. Roll out dough with rolling pin. Cut rolled out dough in half and deep fry each half which will puff up and should be done.

Tequila Cookies!
You won't believe how amazing these are!!! Try them! They're great!
Cookie Ingredients:
1 cup of water
1 tsp. baking soda
1 cup of sugar
2-1/2 cups flour
1 tsp. salt
1 cup of brown sugar
1 tsp. lemon juice
4 large eggs
1 cup nuts
2 cups of dried fruit
1 bottle Jose Cuervo Tequila
Sample the Cuervo to check quality. Take a large bowl, check the Cuervo again, to be sure it is of the highest quality, pour one level cup and drink.
Turn on the electric mixer...Beat one cup of butter in a large fluffy bowl. Add one teaspoon of sugar...Beat again.
At this point it's best to make sure the Cuervo is still OK, try another cup .. just in case.
Turn off the mixerer thingy. Break 2 leggs and add to the bowl and chuck in the cup of dried fruit. Pick the frigging fruit off floor...
Mix on the turner. If the fried druit gets stuck in the beaterers, just pry it loose with a drewscriver.
Sample the Cuervo to check for tonsisticity. Next, sift two cups of salt, or something. Who giveshz a sheet.
Check the Jose Cuervo. Now shift the lemon juice and strain your nuts. Add one table. Add a spoon of sugar, or somefink.
Whatever you can find. Greash the oven. Turn the cake tin 360 degrees and try not to fall over.
Don't forget to beat off the turner. Finally, throw the bowl through the window, finish the Cose Juervo and make sure to put the stove in the dishwasher.

appetizer..... Chili Cheese Cubes
8 eggs
1/2 c. flour
1 t. baking powder
3 C. grated Monterrey Jack cheese
1 1/2 C. small curd cottage cheese
1 4 0z. can chopped green chilis, drained
Beat eggs until light. Stir together flour, baking powder... add to eggs. Fold in cheese. Turn into a greased 9 x 9 x2 inch baking dish. Bake at 350 for 40 min. Let stand for 10 minutes. Cut into small squares. Serve at room temp.
Dessert... Key Lime Pie
2 eggs
1 egg yolk
1 (14 oz) can sweetened condensed milk ( not evaporated milk)
1/2 C. fresh or bottled lime juice
2 T water
1 to 2 drops green food coloring
1 graham cracker crust
1 C whipping cream
2 T sugar
lime slices for garnish
Beat eggs and yolk.Gradually add milk to yolks.Add lime juice, water, and food coloring. Whisk until well mixed. Pour into crust; place on baking sheet. bake at 350 for 20 minutes. Cool for one hour. Then refrigerate at least 4 hours. Chill bowl and beaters...then mix cream and sugar until soft peaks form. Pipe or spoon whipped cream around edges of pie.

For dessert you would want Flan. You could make some water with fresh fruit to drink. For everything else there is so much to choose from. You can make Mole. Birria, Bistek Ranchero, Gotta have beans and rice and plenty of corn tortillas
