Today, for the most part, we use processed salt that's pretty and looks sparkling white and clean but it's missing a lot of the trace elements and minerals that once made it so valuable. Those minerals and trace elements are now stripped out in a processing plant because processors, and even consumers, are more concerned with the look of the product and lower costs rather than in its actual nutritional content.

It's hype in my opinion... sort of like Kosher salt became popular since the tv chefs started talking about it.
Now sea salt is an extension of that under the guise of having more flavor and being healtier than plain table salt.
Salt is salt, except for the "impurities" found in sea salt. The irony is that the "impurities" is what gives sea salt more assumed "flavor".
I think it's just marketing when it comes down to it. Most people wouldn't know the difference between regular salt and sea salt when in a cooked food.

LOL - I like your premise. I think the rise in sea salt popularity is because of the lower sodium intake from eating sea salt. At any rate, I prefer my salt uniodized as I like to get my iodine from foods not altered salt.

I have no idea why sea salt has become so popular...I guess it is because the Food Network is getting so popular to watch and that is what some of the chefs use. Personally I do not like it because I swear that sand gets in my teeth when I eat it!!!
