When water is in excess,pressure on the elastic like wall of the guard cells forces the stomate to open. but when the guard cells dry out due to a lack of water they then deflate and cause the pore to close to prevent any further water loss.

When the suroundings are bright, the rate of photosyntheses is high in the stomata which causes sugar to be synthesis in a high rate. At the same time, kalium are brought into the guard cells
If I remember right, water and calcuim ions are actively brought in to the stomate.The high osmosis level would then cause the guard cells to absorb water from its surounding epidermis cell. This causes the stomate to swell up. Because it inside walls are thicker than the outside walls, the outer walls would be under great pressure. This would cause both sg it shut, or deflating it so that it opens causing the stomata to open up.

In the dark, photosynthesis does not happens. So, the osmotic pressure goes down because of the converting of sugar to starch. The walls of the guard cells is thicker on the inside (near the walls of the opening stomata). The uneveness of the walls would cause the guard cells to be shut tight.

Imagine the two guard cells of the stomate are two long balloons, tied together at the ends. When they are full of water, they swell and expand, and lengthen. So the middles move apart, and the gap inbetween opens. When they dry up, they shrink and the gap closes. Very simple, works very well for the plant.
