Mine's fairly simple. In a crockpot, put a ham hock, a one pound bag of beans, about 6-8 cups of water, a chopped onion, some chopped celery, some chopped baby carrots, a couple spoonfuls of minced garlic, and a few bay leaves.
I use that 15 bean mix, and the flavor from the ham hock is incredible. Cook on high for 7 hours or so until the beans are tender. Then you can pick the ham hock if you want meat chunks in it.

Everyone's recipes sound good. I just made a big pot of Great Northern bean soup this past Tuesday - and it was yummy! I did some different seasoning this time when I made it and would like to make this suggestion to you. I cooked my soup just as most here suggested - beans, ham, potato, onion, celery and carrots and used a chicken broth base. I added my salt and pepper - then for some extra zip I added dried rosemary and thyme - WOW the flavor was wonderful!!!!!! I'd say I used a 1/2 to 1 teaspoon of each - I usually don't measure seasoning - I base it on my taste. Base it on your taste for these seasonings - but it really added a great touch to the soup.

Take beans and soak according to package. Cook beans with ham bone for approximately 2 hours beans should start to soften, add chopped celery, chopped onion and carrots. Continue cooking until everything is tender. Remove ham bone and cut off all meat, cut-up to bite-size pieces, add to soup. If you have left-over ham you can add some of that if soup isn't meaty enough. If soup needs more flavor you can add some chicken flavored soup base or bouillon cubes, this helps the flavor.

I make this one from www.allrecipes.com. It's easy and delicious.
* 1 (16 ounce) package dried navy beans
* 7 cups chicken broth
* 1 ham bone
* 2 cups diced ham
* 1/4 cup minced onion
* 1 pinch ground black pepper
* 1 bay leaf
* 1/2 cup sliced carrots
* 1/2 cup sliced celery
Place rinsed beans into a large stock pot. Add water and bring to a boil. Boil gently for 2 minutes; remove from heat, cover and let stand for 1 hour. Add ham bone, cubed ham, onion, pepper and bay leaves. Bring to a boil; reduce heat, cover and simmer for 1 hour and 15 minutes or until beans are soft. Add carrots and celery, cook until tender. Remove ham bone, scrape any meat from bone and place back into soup and serve.
