I'm making pancakes... it calls for veg. oil and I'm not too sure if I have any... It's snowing like crazy ouside so going to the store isn't an option. Any ideas or can I even drop the oil.... The recipe is here... http://www.cooks.com/rec/doc/0,164,144188-254198,00.html

Generally, I just use whatever oil I have on hand. I always use olive oil so that's what I also use for the pancakes. Or, you can melt butter in the microwave before adding it to the mixture.

You can substitute vegetable oil for olive oil, but butter would burn too fast.

Melted butter or margarine .. or you can skip it all together. It wont be as fluffy, but it will be just as tasty without the added fat!

in the batter you can replace the oil with applesauce
