"Fall in Love" theme. Use fall colors. Have your maids in full-length chocolate brown gowns. Use fall leaves to line the aisle.
Have a wrought iron arch adorned w/ fall toned lillies and roses at the altar. Lots of candles for a warm glow.
Candle lanterns on ea. reception table. Use a fall inspired invitation.
Winter:
bright white and silvery blue- snow flake type theme.
OR
christmas theme- have 2 christmas trees (one on either side of the altar)- you and your family can decorate them at the rehearsal dinner. keep the scheme in the red/green/silver/white/gold or go w/ one color (like aqua) and accent w. either silver OR gold.
The color(s) you choose can lead you toward bridesmaid gowns and florals.
serve warm flavors
have hot chocolate at the cocktail hour
hang mistletoe in the reception hall
mini- christmas trees (one footers) on ea. reception table.
candles

Well At the Church Ask Permission If You can Put Generous Amounts Of White Flowers And White Sheets...If Your Doing Late Fall Try To Get The Leaves Falling season...use brownie earthier tones and the various leaves will make great outdoor pics!!!!
For The Recpetion Use A Colour That Remninds You Of Outside
Winter = White
Fall = Yellow, Brown Burngady
Flowers Will Follow With Also The same Rule
Winter = A Mix Of White Blue And Your Choice Of Roses
Fall = Mix Of Yellow Brown And Scarlet Red Roses
For The Dress I Would Choose Classicalk White Since Being Your Catholic
And For Bridesmaid Dresses...Pick Out 3 or 4 you like and have a vote and let the bridesmaids decide!!!!

How about a harvest theme wedding? Give caramel apples as favors, wrapped in clear bags and tied with gold ribbon. Use gold and red for your bridesmaids dresses. You can also have your guests bob for apples at the reception and have a white cake with red accents. Fresh fruits and veggies in wooden bowls would make nice fall centerpieces. Use gold or red table cloths.
You could also go with a christmas theme wedding. Use christmas trees as decorations and have the guest remove their oranament favors after the cermony. Your bridesmaids could wear green or red. Christmas bells would be a great way to tie in your place cards. Chrismas carolers would also tie into the theme.
A winter wonderland wedding could be done in white and ice blue. Snowflake cutouts would make unique place cards. You could also have your flowergirl throw "snowflakes" instead of flower petals.

Well, being a wedding/bridal consultant, I will give you my professional opinion.
For a formal cathloic wedding, soft whites, silvers, creams, beiges, and colors like that. Themes could be: Winter wonderland, fantasies in the snow, "flurries" of love, etc.

If you are having a winter wedding and you live in a cold area it would be very nice to have the girls wear a deep red and carry white flowers such as lilies, and your flowers could be red roses.
