Can I put Seasoned Salt and pepper on it first or would it it taste funny with the honey?

I think you would be better off using regular salt. Seasoned salt has garlic, onion and celery and that might overpower the honey flavor. You can also used an herb, like thyme or ginger. Sounds delicious. Good luck.

Rather than just rubbing the bird with salt & pepper, I suggest that you soak the bird in a brine made from a cup of kosher salt and a gallon of water. Let the bird soak for 3 -4 hours. You won't need any other salt and the bird will retain far more moisture in the white meat while the dark finishes cooking through. Toss some orange and lemon wedges into the cavity along with some garlic and onion chunks. Roast and glaze as you intended.

leave it off, it messes it up. if anything, marinate your chicken in orange juice or lime. you can also use an injector for whole birds.
