hhhhm, not much info here. I do see "Cooking" space so, maybe you have a stove top or microwave, or burner and big/little pot, maybe a skillet or slow cooker, toaster, ha, to cook in. Maybe you want a cold supper. Maybe you cook for one person. Maybe you have/don't have cooking experience. Who knows.
Guacamole tacos!
heat taco shells (somehow)
mash avocados (1 per person) and add to taste; garlic salt,Tabasco, squirt of fresh lemon juice. Make it your way; this is basic way.
Stuff warm shells with guacamole, grated Monterrey jack cheese, and top with alfalfa sprouts. You will probably eat 3 at the most. Very good for you.
I have been using those fresh soup kits in the produce section of the bigger nicer stores (HEB, here). Wow! Talk about easy and good. Everything is in there and already cut up for you. My favorite here is "Corn Tortilla Soup"...even has the chicken in it. just follow the instructions. Read it in the store so you don't forget chicken broth or something.
When using avocados in "health food" rather than Mexican food I use an ingredient called "Spike" (red label says "You'll like Spike") very, very good. Add to taste to guacamole recipe above. It's in the spice section.
Oh yes, if you wanna eat healthy maybe invest in a small steamer around $10.00. Doesn't take much space and can be put away. You can steam/poach rice, veggies, shrimp, fish, chicken...comes with a little booklet, very very easy.

Make my Serrano Stir fry.
I don't have recipes, I just make it up as I go along. this one uses chicken marinated in tabasco, whatever vegetables you're in the mood for, about 10 serrano peppers and some chicken stock and cornstarch for the sauce.
