My ex used to use summer sausage for a lot of things. One thing you can do is add it to eggs with cheddar cheese. Another thing he liked to do with it is dice it up and add it to noodles of any kind. You can also make a soup out of it and use sliced potatoes with it.

Peel and slice a small log of summer sausage, Add it to boiling water in which you are cooking pasta. When the pasta has finished cooking, drain both in a colander and return to the sauce pan. Add a tablespoon or so of butter or margarine. Stir until melted, then sprinkle with grated Parmesan cheese to taste. (fresh parmesan is best). Serve immediately,. Delicious! .

I have used summer sausage to make a potato and sausage soup that was delicious. Basically, just make cream of potato soup and add as much of the sausage as you like. It gives the soup a really nice flavor. You coud also use it in a black bean soup or vegetable soup.

I have used summer sausage with spinach and some hard boiled eggs and a honey mustard dressing with a little bit of garlic. It sounds very odd but is incredibly tasty.

We eat summer sausage in pasta salad, yummy. Also use it in scrambled eggs or a hot pasta dish.

I think it would taste good fried hard and on a sandwich. That or maybe fried and then put in macaroni and cheese. YUMMY

I'll admit it: you stumped me. I've never heard of using it other than on a cracker or just out of hand. Will be watching for other answers, as I have a log in the fridge myself......
