I, too, am shocked you can't find provolone. Have you tried the deli? You could ask for some cheese in a chunk, rather than sliced. Provolone is smooth, milky and mild. It's a bit like mozarella, but not as soft.

White American will work.

Mozzarella is also excellent but a bit more stringy if you plan to melt it.

Where do you live? I find it hard to believe that you can't find provolone in even the most remote of markets in America. True, you might have to go to the Deli counter and have them slice you some rather than looking in the industrial pre-packaged cheese section of the local food store. However, it is pretty widely available.

mozzarella is prob about as close to the taste. Only difference is provolone is not as "stringy" as mozzarella when melted. I use a mixture of both most of the time. I don't know where you live, but here in the states(PA.) you can find it anywhere and everywhere. You may want to ask your local grocer to start stocking it if it is hard to find where you live. Plenty of good brands on the market.

have you checked the sliced cheese section of your local supermarket? sargento makes it and i'm pretty sure they're nationwide and most markets have a store-brand. if you definitely can't find it, mozzerella can kind of pass but only if it's the kind not floating in water. muenster might work also but it's harder to find than provolone, so good luck with that.

If you go to the grocery Deli you can get sliced Provolone , just ask. You may have to shred if you want it that way.

you need to go to your deli counter and ask for provolone - it is one of those hard beige cheeses you see in the glass case - it is pretty rare to see it sliced anywhere.
