Comes from the olden days when men would take off their hat and tip it at the ladies. Any time a man wears a hat it's a show of poor manners and someone who is disrespectful towards those of the opposite sex. Plus, hats just look horrible. People shouldn't wear hats, that's how thinning of the hair and balding occur anyway.

Being polite means being sensitive to other's presence, respect them and acknowledge them in a quiet way.
Wearing hat is more functional in olden days; such as protect yourself from the weather elements because only men worked outdoors. Then, it turned out to be a fashion statement. But the tradition is to not to appear as if you are ready to part someone's company any moment, or leave in a hurry by wearing such items.
It's etiquette. It's manners. It's being respectful. Plain and simple.

I would guess it's like wearing your windbreaker or outdoor coat and scarf at the dinner table. Taking off your hat symbolizes that your are present and within the moment..not with one foot out the door. It is a way of showing those in your company that you are present. Guess it's just as bad for those of you that carry on - on the cell phone during dinner. Stop that. It's rude!

I'm not sure where this started, but it irritates me to hell when I see guys eating with their hats on, the only thing more irritating is when they take it off and put it on the table that' I'm eating off
