My husband's birthday is tomorrow. I have to work so I won't be able to bake him a cake tomorrow so I am baking one today while he's at work. He likes poppy seed. But I also want to bake him a healthy cake. You know lighter calories, stuff like that.
Anyone got a good recipe???

Buy an angelfood cake mix. One of the "just add water" mixes. Get a can of crushed pineapple and add it to the cake mix instead of the water. Make sure you mix it in a large mixing bowl because it will foam up quite a bit. Bake according to directions on mix. Use whatever frosting you prefer, but it is good enough that it doesn't even need frosted. Fat Free!

take 1 box angel food cake the one you only add water to. do not add the water but add one can of already made in a can fruit, any flavor stir together and bake as normal. this is really good and not very fattening at all.

Believe it or not, by the time you invest your time (at minimum wage), and invest in the materials to make the cake, you can do better if you go to the grocery store, go to the bakery, and buy your husband a nice, professionally made cake. I recommend it, and then YOU CAN RELAX and really enjoy his birthday with him!

www.allrecipes.com
is the only recipe website I use. You can search by keyword, by ingredient, by ingredients you DON'T want(like if he's allergic to something) and the recipes are all rated by people who have used them, and sometimes there is feedback so if someone added something to the recipe to make it better, you would be able to see that too.

Yuck, I can't stand poppy seed cake, but to each his own and happy birthday to your hubby :-)

Wholemeal Poppy seed cake

This cake is not only delicious, but is also a healthier alternative to many commercial cakes and biscuits. This is because it is a good source of fibre and antioxidants (due to the use of wholemeal flour, poppyseeds, fresh orange juice, olive oil). It is also low in saturated fat because it does not use butter.
This cake does, however, contain calories due to the fat and sugar content - but at least they are not empty calories since you are getting quality nutrients with the calories (unlike many other cakes/biscuits). So people watching their blood sugar levels or body weight need to watch the serving size.

Ingredients

3 cups wholemeal selfraising flour
1 1/2 cups sugar
1/4 cup poppy seeds
1 teaspoon baking powder
3/4 cup extra virgin olive oil (or peanut oil)
3 eggs
3/4 cup reduced fat milk
2 teaspoons finely shredded orange peel
3/4 cup freshly squeezed orange juice (don't discard the fibre)

Method

1. Grease and lightly flour a fluted cake tin.
2. Combine all ingredients in a mixing bowl and beat with an electric mixer on low to medium speed for about 60 seconds. Pour batter into cake tin.
3. Bake in a 350 degree F oven for 50-55 minutes or until wooden toothpick inserted near centre of cake comes out clean (this cake can also be freezed for up to 1 month).
4. Leave in tin for 10 minutes before turning out on to a wire rack to cool.
