They are two different things, actually.

Organic cotton is the "tree huggers" marketing ploy. What it really means is that supposedly the cotton was grown using pesticides, and other "things" that prove to have less impact on the enviornment.

I am slanting this definition because it is apparently grown in places like Chile, India, and Peru. And other than the trade association and certain enviornmentalists, no one else has looked into how this cotton is actually grown. Who knows what they are doing, or how what they are doing is less impactful on the enviornment is anyone's guess.

However, "organic" cotton is about 20-40 percent more expensive, so someone is making a ton of money on this deal.

Now with the other part of your question, 100% cotton is self explannatory. It simply means that whatever it is, the fabric is made of all-cotton, and no other fibers. And that 100% cotton could be from the normally grown standard cotton, or it could be that organically grown or "organic cotton."

Organic just means that no pesticides or any other chemicals were used when growing the plant. 100% cotton just means that there's no other fabric mixed in with the cotton when making a product. 100% organic cotton would mean the same thing but no chemicals or pesticides were used.

Polyester does not shrink, does not loose color, that I have seen. It is very cool in the summer and does not soak up sweat, like cotton does. It is fast drying. Cotton, once wet, stays wet for a long time. This could be dangerous if you are in a survival situation. Cotton kills, as they say. The only issue that I had for a minute with polyester, was that for some reason they hold body odor and you have to wash them in hot water, not normal wash. I imagine they might be a bit cool in the winter months, but if you get wet, remember that cotton stays wet and becomes heavy and polyester is fast drying. There is a good reason why you see athletes using polyester instead of cotton. It is thin, light and stays light, while cooling you off. god bless!

There is not one, unless you mean organically GROWN cotton, in which case it means no or little chemicals were used depeding on the method of organic certification used.

cotton is cotton i think organic cotton the only difference is that they don't used pesticides
