Jerk Chicken
1 tablespoon Ground allspice
1 tablespoon Dried thyme
1 1/2 teaspoons Cayenne pepper
1 1/2 teaspoons Freshly ground black pepper
1 1/2 teaspoons Ground sage
3/4 teaspoon Ground nutmeg
3/4 teaspoon Ground cinnamon
2 tablespoons Garlic powder or fresh
1 tablespoon Sugar
1/4 cup Olive oil
1/4 cup Soy sauce
3/4 cup White Vinegar
1/2 cup Orange juice
1 Lime juice
1 Scotch bonnet pepper (habanero)
3 Green onions -- finely chopped
1 cup Onion -- finely chopped
4 to 6 chicken breasts
Seed and finely chop Scotch Bonnet pepper. (You might want to wear plastic gloves to do this) Trim chicken of fat. In a large bowl, combine the allspice, thyme, cayenne pepper, black pepper, sage, nutmeg, cinnamon, salt, garlic powder and sugar. With a wire whisk, slowly add the olive oil, say sauce, vinegar, orange juice, and lime juice.
Add the Scotch Bonnet pepper, onion, and mix well. Add the chicken breasts, cover and marinate for at least 1 hour, longer if possible.
Preheat an outdoor grill.
Remove the breasts from the marinade and grill for 6 minutes on each side or until fully cooked. While grilling, baste with the marinade. Bring the leftover marinade to a boil and serve on the side for dipping.
Note: you can substitute serrano chillies for the scotch bonnet and if you can't grill outside, then bake at 375 until done.
Serve with beans and rice, fried plantains and a nice salad.

Chicken casserole is nice. I gently fry chicken pieces, chopped onion, celery and smoked bacon. Stir in a couple of desertspoons of flour to soak up juices and thicken the sauce. Slowly add a pint of stock and transfer to a casserole dish. Cook at 160 degrees C for about an hour. About 15 mins before serving add 2 chopped, fresh tomatoes (remove skin first by immersing in boiling water and peel off the skin) and a handful of frozen peas and sweetcorn.
Serve with boiled potatoes - lovely and tasty and very easy to make without using convenience sauces that are loaded with additives. Not too much washing up either as everyting is cooked together (apart from the potatoes)

Chicken pieces or whole bird?
Whole bird, roast it, still good way with lots of steamed fresh veg
use the carcass as the base for your gravy.
If you do roast potatoes put em in cold water bit of salt bring to boil then take em out and cover lightly with oil and put em on the top shelf of hot oven they will go golden crispy but be light as feather inside.
Chick pieces are good to marinate and there are 'sauces' to marinate in bottles but as a chef I would not touch any of them.
Like some said stuff it, do a Jamaican style stuffing
pineapple diced with onion and a touch of sage or thyme
but there is simply so much you can do

a lot depends on what you have
ingredient wise and your level of cooking skill.

Make a curry using 2 ckicken breasts cut into bitsize peices, packet 8 plain yogurt cartoons, tomato purree( 2 tablespoons ) 1 whole garlic clove crushed, fresh ginger as much or little as you want peeded and cut into peices, Jelfrazi curry powder 5 teaspoons for med hot one, add more if required
fry chicken until lightly browned, mix together in blender yogart tom purree ginger garlic yogurt pore onto chicken peices add curry powder bring to boil then simmer until cooked about 20 mins keep covered stirring ocasionally. Serve with brown rice and garlic bread

wash and cut the chicken meat.place them in a pan with cover then add soy sauce,vinegar,garlic, onion,bay leaves,ginger,chilli if you want and basil.turn on the stove to medium flame and let it boil until all the juice almost evaporated.it is simple yet delicious recipe.you may add potato,carrots and sweet pepper as garnishing veg.good luck.it is called humba here in the philippines.don't forget to put the cover while cooking,the flavor is kept inside the pan to make the recipe delicious.

Teriyake, soy sauce, a bit of bbq and tomato sauce makes a nice marinade and then you fry the chicken with onions. It's lovely! Failing that, if it's your first time cooking, just get a ready made sauce and have it with pasta or rice.

He' a great recipe never fails:
Take 1 meduim chicken, rub two kg of butter over the outside and another 1 kg internally.
Crush 3 kg of pepper corns and rub all over the chicken.
Now roast for 1 hour 20 minutes.
Take the chicken out of the oven and allow to rest.
after 20mins carve a serve, ummmm pepper chicken, my favourite!!!
