I've just peeled some, cut them into thin strips, and fried them in very hot oil. Has anyone else tried this?

Its french fries, or shoestrings. You can also make it by using less oil by first coating the sliced potatoes with non-stick spray oil and then baking them in a oven tray in a preheated oven at 400 deg for 20 to 30 minutes. Remember to not add salt until you take the fried potatoes from the oven. Mine came out yummy and i was not feeling guilty of eating french fries this time as it didnt consume much oil.

yes. Other people have tried this. If you mean you cut them into something like a julienne, then they are called shoestring potatoes and I've bought them at the store.

Not strips but medallions. Fry a little bacon (break up) and add it with some sauteed onion, kosher salt , minced garlic, black pepper, and parsley.

You can add these ingredients to your strips.

Yes over here we call them crisps. If you're in America, chips. Well done for this discovery.
