Try any of the Canary Islands. 4 hour flight and (nearly) always at a good temperature even in winter. I like Lanzerote which is not like people paint it at all. Peurto del Carmen is mostly flat but take care near the harbour area as there are cardiac arrest hills to walk up. Peurto Blanca is also nice but some parts are fairly new and there is still some building work.
The children will like the beaches and going on the trips to the Fire Mountains where you can drop water down a hole and the volcanic heat sends it skyward as steam. Dont bother with the camel rides as a bit of a rip off, the couch will take you through all the sites and these are spectacular. Plenty of restaurants at reasonable rates so mum doesn't have to do all the cooking!!

Go to LA or Australia, as it is warm there all the time and it would be good for the kids, and also a different experience to have christmas on a beach

I went to majorca over xmas. It rained for acouple of days but after that it was lovely. 25c so Tshirt whether. But obviuosly not hot.
