I've noticed people driving while a movie was playing. Isn't this a Car Crash waiting to happen?

Because they think it looks cool and like on MTV's Pimp My Ride.
To have it turned on while driving is not only illegal in most places but also VERY dangerous. It is too distracting.

Most places require any screen in the drivers view be wired to the parking brake, light switch. This means the screen can only be on when the parking brake is applied. To prevent the screen from working when the vehicle is moving. Simple solution is that the remote wire you would normally hook to the P-brake switch gets hooked to another 12v source and the screen works whenever you want it too.

Question is, why do they put displays on the back of the last set of headrests? Maybe so when they are in a convoy to a car show the friend driving behind can watch the same movie?

It's only useful if you spend a lot of time in your car or if you have kids. Also no one in their right mind is going to try and watch it while driving.
