Cut potatoes, fry in hot oil for 2-3 mins or so, drain, wait till cold, bag, freeze.

Potatoes don't freeze very well. They turn to a mealy, mushy mess when you thaw them.

Commercial frozen potatoes are treated with chemicals that prevent this from happening before they are frozen. This process is way beyond most household cooks.

Chop them and freeze them but you should add citric acid or something to keep them from turning black. If can be added to rinse water if you like. Evert cut surface should be exposed.
