Cold Tossed Jellyfish

1pktsalted jellyfish - (1 lb)
SAUCE
1tblbalsamic vinegar
(or Chinese dark rice vinegar)
1tblsoy sauce
1tspsesame oil
1tsptoasted sesame seeds
1/2tspsugar
1/8tspfreshly-ground white pepper
* Without unfolding the layers, cut the jellyfish into very thin julienne strips, about 1/16-inch wide. Place the jellyfish in a colander and rinse it under cold running water for 15 minutes. Toss the jellyfish occasionally to rinse it evenly.
* Bring a large pot of water to a boil and pour the hot water over the jellyfish. Immediately plunge the jellyfish in a large bowl of cold water and drain. Repeat the rinsing with boiling water and chilling with cold water one more time. Pat the jellyfish dry between paper towels.
* Combine the sauce ingredients in a medium bowl and add the jellyfish. Toss until evenly coated. Cover and refrigerate until ready to serve or for as long as one week.

You'd think that by the time a jellyfish left the sea, it would have seen enough water! The recipe directions are correct. Wash the jellyfish for 15 minutes - 30 if you have the time. The more it is rinsed, the more crispy and crunchy it becomes.

How To Cook A Jellyfish

I did not know that they are eaten, untill you asked the question. So I went straight to internet seaerch, and this is one of the results:

Jellyfish are salted and flaccid to the tough. Strictly speaking they are preserved, not dried. The best kind is amber in color, large thick and firm pieces. It doesn’t have any special taste of its own but its gelatinous texture is highly enjoyable. Usually used in salad and indispensable in assorted cold starters.

To soften the jellyfish:
Since it is difficult to cut it flat, roll it tightly and cut into 1 to 2 inches pieces.
Drop in the jellyfish in plenty of hot water, separating pieces. Cook, stirring with chopsticks.
When it is cooked and starts shrinking, drain on a colander and drop into cold water.
Wash well under cold water to soften and to draw excess salt.
Immerse in cold water for 1 to 3 days to draw salt.
Simple jellyfish recipe as snack

Cut into very fine shreds and serve with a seasoning sauce of 1 tsp. sesame oil, 1 tsp. light soy sauce, ½ tsp white vinegar, ½ tsp. sugar and a pinch of MSG (these quantities are sufficient for 2 sheets of jellyfish)

You sure it was a jellyfish? Could it have possibly been a squid. I was under the impression that jellyfish are poisonous.
