If the government takes it from you, it's confiscating. If anyone else takes it from you, it's stealing!

you mean confiscating. Confiscating has more to do with legal procedures. You are legally allowed to confiscate things at certain circumstances. Stealing is taking something away without any rights whatsoever.

They may both feel the same because either way your stuff is gone. But stealing is a larceny, "the unlawful taking and carrying away of another person's property with intent to deprive the lawful owner of his/her use and enjoyment of the property."
Confiscation is the lawful taking and carrying away of another's property.

Confiscating require the use of authority (authoritative overtake!) while stealing is mostly done without the knowlege of the owner!

Confiscating is the taking of another's possession with due process, and stealing is taking it illegally.

There are levels of wrongfulness in misappropriation of property. The worst is theft by violence or the threat of violence: robbery (especially involving invasion of one's home); at the other extreme is taking under color of right (typically, "conversion" -- or appropriation for one's own use of goods held in trust, or on bailment, etc.)

Confiscation can be for public-law reasons and may be legitimate sequestration (as by eminent domain), or as a penalty (goods used in or fruits of a crime), or for restitution (to a victim of a crime). Or it can be a misuse of power, in a corrupt society.

A crook steals.

Police confiscate (then sell it at a police auction a month later)

Pretty much the same thing.
