We’re guessing you have been cooking your spinach in an aluminum or unlined copper pan. Pans made of aluminum or unlined copper react with the sulfur compounds in green vegetables to create unpleasant odors and flavors, and destroy vitamin C, folic acid, and vitamin E. You should cook greens in stainless steel, enamel, or glass pans.

U must be using a metal pan or pot. Use a cast iron one. If You don't have that. If U have to use a metal pan then brush the pan the all the interior with salt before cooking anything in it. This won't eliminate the metal taste when you cook something but will bring it down to a minimum!
Note metal pots are not healthy they are said
to be the cause of Alzheimer and even Amnesia.
As soon as U can afford it get some cast iron
cooking pots & pans!

It's not your pan. Spinach contains Iron. Lots of people don't like that taste.

Tiropita is just cheese pie. Shred a pound of feta cheese into a bowl with a dozen eggs, to make a custard, mixing as you go. Oil a baking pan with olive oil, and put down two sheets of filo. Put some more oil on top. Add a spoonful of custard, smoothingit out, then a sheet of filo, and repeat until you have only one spoonful of custard left. Add an ounce of olive oil and 2 ounces of water to that last spoonful of custard, mix it up really well, and put this on top of the last filo. Bake 20 minutes at 400F, and give me a phone call, so I can come over for supper.

Sounds like your olive oil is old.
Or what kind of pan are you using? The spinach shouldn't taste like that by itself.
Try this, steam the spinach and then put the olive oil on after.

I get the funny coating on my teeth too, but I think it's just something in the spinach. I usually just steam mine with a little salt and pepper.

I almost always eat fresh spinach salad. Otherwise, I boil it. You can try cooking it with bacon grease and a couple of slices of cooked bacon..
