Baking or cooking? For cooking I'd try a coq au vin, or a roulade. For baking, maybe a souffle or a layer cake.

Try a moussaka or a proper pie one where you have to bake the crust blind and the fill with gravy/sauce/gelatin after the baking has finished.
For baking try a black forest gateau made with the proper cherries and liqueurs. you could try a souffle.
