You could do chicken fajitas. Just take 3 or 4 boneless skinless chicken breasts, cook them in the micro, about 6 or 7 minutes. Then, cut the fat off and cut them into strips. Put in a skillet with cut up green peppers, red peppers and onions. Sautee it all with some fajita seasoning you buy in a packet or I use what I have in my spice rack, some chili powder, ground cumin, garlic salt, a little regular salt - whatever you like. Serve that with tortillas and sour cream. You can have cheese on the side too, and salsa (I make my own but you can buy it in a jar) You could even serve margaritas with it if you really want to get into it.
ok, easier? buy ravioli in the chilled section and buy Paul Newman's spaghetti sauce and follow the directions. (Boil the ravs for about 5 -7 minutes. Drain them, put them back in the pot you boiled them in and add the sauce over low heat.) You can also buy garlic bread in the frozen section and Salad in a bag with some dressing too. Yum.

Lasagne always works, and there are a billion good recipes a web search away.

Or, since it is winter, you could go with a nice creamy soup. The easiest ever is to just boil a bunch of baby carrots in chicken stock, puree it, and add a little cream and a bit of sharp cheddar cheese.

spagttie...wine..garlic toast is always nice..and easy. Or fettichinni, go buy some ready made fettuccine sauce..the noodles..and if you want..some pre made chicken you can slice up in it after.
or..a romantic type of picnic in the living room..get some french bread..some nice cheese..preserves..grapes..strawberriess...a nice wine..or something. The romance of it all on the floor..with a lighted candle..soft music..flowers..will swoon her into thinking that was the best dinner she has ever had...and it was as easy as a trip to your local grocery store..no cooking in voled!
