As a topping, mix some cottage cheese, some Mrs. Dash, and a little dash of salt. Sour cream is good, but trust me that you will love this.
Broccoli is good as a topping, too.

I love a baked potato with steak or ribs.

Clean out potato when cooked, mix in a bowl with butter, cream cheese, finely chopped onion, bacon bits and some cheese (Cheddar). Mix it all together and put back in potato. Great with veggies and steak! Nothing better amigo.

You can make the baked potatoe a meal in its self... with cheese, bacon, ham, sour cream, broccoli, chives, chili, what ever you want. If you wanted to make it a side item it gos great with grilled steak or chicken or ribs. :)

Any meat, especially if it's grilled.

A big, fresh salad.

Butter, cheese, sour cream, salsa, sauteed spinach and feta cheese, any number of toppings are fantastic on a baked potato.

I'd pile it high with butter and sour cream and accompany it with a rib steak or roast beef along with buttered slivered green beans with almonds. Wow, I'm getting hungry and it's bedtime, lol!
