When the consular officer issued your J-1 for your internship, it said you can't seek employment. The internship itself doesn't count as employment. All it means is you can't try to get a real job based on your J-1 visa. You can always apply for a different visa that would allow you to work - like an H-1B or a green card through PERM. You may also apply for change or adjustment of status (depending on which visa you can get). You may have to leave the US, though, if you haven't received the new visa before your J-1 runs out. If you find a sponsor for a new visa, talk with an immigration attorney about the details of your situation to be safe.
If you get a new visa and change/adjust status, you are legal until the new visa says you have to leave. The expiration on the J-1 is no longer relevant once you have changed to a new visa.
