Its not so much about the quantity you eat as it is the quality. Ranch dressing, mac & cheese and coffee cake aren't great. I would suggest eating healthier foods (fruits, veggies, lots of water, oil or vinegar dressings) and more of them. You look and feel better.

Okay im 15 and i lost 20 pounds and now i weigh 110 and this may sound completely familiar and you probably heard it 39042834 times but YOU HAVE TO EAT breakfast. If you go to bed and then wak up and eat nothing thats at least 10 hours since you last ate anything. Your body then goes into starvation mode and the next thing that you put in your body gets added as fat (becasue your body doesn't know the next time its going to eat so it tries to save everything) mac and cheese is a little fattening for a diet, but nice portion of it shouldn't be too bad. Salad is good and the blue berry coffee cake probably isnt too good... an apple may look like its more and weighs more then that little piece of cake, but its def. a lot better for you and your body can get use those good sugars and calories better then it can for the ones in the cake...
good luck =) feel free to ask me questions

The quantity is fine, but the nutrition is lacking. First, eat breakfast. If you're on the go, try a protein shake. Lettuce (even with ranch) is not enough lunch. You need to fill up on good foods. Try adding a lean protein like tuna, grilled chicken (tofu if you're a vegetarian) or even some lowfat cheese (string cheese, cottage cheese, etc). Then for dinner, steer away from processed foods. But if you want easy, try one of those lean or organic frozen dinners. And keep having a little dessert, you don't want to feel deprived. Hope this helps!

The macaroni and cheese has a lot of fat in it. Add some grilled chicken to your salad and eat a few more fruits or vegetables. Like an apple or banana. Drink lots of water. Like 6 glasses a day. Dont forget to make sure you drink a couple glasses of skim milk for the calcium.

Don't diet/try to weigh less. 5'8 is well above average height and 140 is below average for that height.

That being said, you need a better balanced diet than what your just described.
