Homemade garlic mashed potatos, brown sugared carrots & fresh baked rolls....don't forget the sweet tea!!

ground beef, rice, and stewed tomatoes in the stuffed peppers. Side dishes can be steamed asparagus, a nice tossed salad and a bagget of bread. Even julienned sliced Yukon gold potatoes fried in fresh pressed olive oil and garlic with salt and pepper to taste. A great hoppy wheat beer cold and crisp or a Pale Ale or maybe a good heavy red with a big taste. For desert a chunk of dark chocolate and raspberries.

I personally think that is the beauty of stuffed peppers - they are a complete meal and only need wine (white zin, if you ask me) and dessert. A salad might work too - but I put rice in the stuffing, so the pepper has it all.
If you don't put rice in, I think mashed potatoes would be awesome.

Whenever my mom made stuffed peppers we would always have mashed potatoes with them and it was delicious. Some people like to mix the stuff from inside the peppers into the potatoes.

If there's not too much starch in the pepper stuffing potatoes would be good and then serve with a light tomato cream sauce.

It's hard to find something that's not already represented in the dish, since you have meat, grain, vegetables... a complete meal nutritionally already.
What I've found to go with them, which also contrasts, is baked apples (with cinnamon and brown sugar).

My mom always made mashed potatoes with red gravy (from the peppers) when she made stuffed peppers. My dad's favorite!
