Parmesan Chicken
• 1 tablespoons Dijon mustard
• 1/4 teaspoon white wine vinegar
• 1/8 teaspoon salt
• 1/8 teaspoon black pepper
• 2 skinless boneless chicken breast halves (4 to 5 ounces each)
• 1/4 cup panko (course bread crumbs)
• 1/4 cup finely grated Parmigiano Reggiano
• Parchment paper
• Cooking oil spray
Preheat oven to 450°F and line a baking sheet with parchment.
Whisk together mustard, vinegar, salt in a large bowl and add chicken breasts, tossing to coat well.
Add cheese, pepper and bread crumbs and combined well. Transfer to a shallow soup plate or pie plate.
Dredge chicken, 1 piece at a time, in crumbs, coating completely and pressing gently to help crumbs adhere, then transfer to baking sheet. Spray lightly with cooking oil spray. Bake in middle of oven until golden brown and cooked through, 15 to 20 minutes.

One of my faves. is a "fire cracker chicken".
You'll need :
2 boneless skinless chicken breasts
1 large cucumber
1 large tomato
a cup of sliced black olives ( drain the juice if canned)
some cooking sherry
a few tablespoons of olive oil
a bottle of Caribbean jerk sauce (I prefer Uncle Bum's)
some Tabasco sauce
Peel cucumber, leaving some skin on and slice in half the long way. Take a spoon and remove seeds. Now slice the 2 halves crosswise. they should now look like a bunch of "U"s.
Dice tomato.
Brown chicken breasts in olive oil.
Drain excess oil and add sherry and all vegetables. let cook for a moment.
Add Jerk sauce and season w/ Tabasco and pepper to taste.
Serve warm over rice. Enjoy!
Be creative and feel free to experiment.

Oven Baked Chicken 1 Tablespoon butter 1 1/2 teaspoon paprika 1/4 teaspoon pepper 2/3 cup Bisquick 1 1/4 teaspoon salt 2 1/2 - 3 1/2 pounds chicken Preheat oven to 425. Melt butter in 13x9x2 inch baking dish. In a large bowl mix Bisquick, paprika, salt, & pepper. Coat chicken place chicken in dish (dish & butter should be hot) Bake 35 minutes turn chicken bake about 15 minutes more or till chicken is no longer pink when thickest pieces are cut. *Note* High altitude bake 40 minutes turn & bake about 20 minutes longer.

CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
chicken breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream
Heat oil and butter in skillet. Add chicken to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Stir in sour cream. Serve cucumber sauce over chicken.

I like to make an Asian inspired chicken salad.
It requires
11/4 cups of cooked diced chicken
1/4 cup of Two Sisters Gourmet Peanut Ginger Marinade
2 Tbsp of finely chopped onion
2Tbsp hoisin sauce
11/2 tsp of finely chopped fresh cilantro
1Tbsp sesame seeds toasted
Combine all ingredients and warm in microwave. Serve with lettuce leaves and make lettuce wraps.

I've cut chicken breasts into chunks, saute them in a little olive oil until cooked. Drain fat if any. Dump a jar of salsa in the pan and heat. If you want, you can add a little low fat cheddar cheese. It's simple and tastes pretty good.

15 min prep Chicken Stir fry
Change to: servings US Metric
2 whole chicken breasts, cut into bite size pieces
3 tablespoons soy sauce
1 tablespoon oil
4 cups fresh broccoli, cut into floweretts
1 cup water
1 chicken bouillon cube
1 dash garlic powder
2 tablespoons margarine
1 cup fresh mushrooms, sliced
1 (5 ounce) bamboo shoots, drained
1 tablespoon lemon juice
1 tablespoon cornstarch
2 tablespoons sesame seeds
In a small bowl combine chicken pieces, soy sauce and oil. Blend to cover chicken and set aside for 5 minutes.
Bring 1 cup of water in microwave to a boil and place chicken bouillon cube in and stir well.
In a electric skillet or large pan, add broccoli and 1/2cup of chicken broth. Simmer on medium low for 5 minutes. Push up side of wok.
Increase heat to medium high and add chicken pieces and sprinkle dash of garlic powder over chicken. Stir fry til tender. Push up beside broccoli.
Add margarine, let melt and add sliced mushrooms. Stir fry til tender.
Bring chicken, broccoli, and mushrooms down from sides and add bamboo shoots and stir all together.
Combine lemon juice, cornstarch,1/2c chicken broth, stir to blend and pour over stir fry mixture. Heat til thicken, stirring constantly for 2 minutes.
Add sesame seeds and Serve over white cooked rice or chow mein noodles.

put asparagus in the bottom of a pan and then put your boneless chicken on top cover with cream of chicken soup and bake for about 30 minutes or until chicken is done....its delicious!

I like to marinate them in Teriyaki sauce and put em on the grill. They are so tender and yummy and are great with asparagus or green beans and a baked potato.
I also like to brown them in a pan seasoned with salt pepper, garlic salt and onion salt on the stove then bake them with fat free cream of mushroom soup and about a half of cup of milk on 350 for about 30 minutes.
Or you could brown and season them then pour Alfredo sauce over them, top with mushrooms and sliced tomatoes and bake for about 40 min on 350. yummy.
Or grill or brown them in a pan and season with garlic and onion salt. Once they are brown, put about a 1/3 cup of water in the pan, add broccoli florets and cover so that the broccoli steams itself. Then make rice with soy sauce to mix the chicken and broccoli with.
good luck. enjoy. oh and Cambells fat free soups always have good recipes on the back of the cream of chicken, broccoli, mushroom, herb, etc....

quickly brown each side in a little olive oil. add some garlic, shallots, white wine, fat free Italian salad dressing, lower temp, , salt/pepper to taste, cover with lid to keep in moisture, cook until juices are are clear & it's done! Great with a salad, high protien low fat!! quick & easy!
