Well, I know of 1 desert that they set on fire. Baked Alaska. It is a cake with ice cream in the middle, and they somehow set the cake on fire without melting the ice cream. It sounds weird but it's really good.

There are several.
One that is very easy to make is Black Cherries and Brandy. (I might have the name wrong.) You take a bowl of fresh black cherries and, using a paper clip, remove the pits and stems. Put them generously over a bowl of French Vanilla ice cream. Put some brandy (100 proof or more) in a fireproof glass. Light it on fire while it's in the glass, and while it is burning, pour it over the cherries and ice cream. Serve immediately.
I think many of these burning dishes are called "whatever flambè." I've never been sure whether or not you're supposed to eat the fire.

Cherries Jubilee. bananas Foster is another. Baked Alaska is one. You cover the cake in meringue and then spray it down with liquor and lite it. they pretty much all use liquor. Rum or brandy. I don't recommend doing this though. This type of fire can spread and go out of control rather quickly.
