OVEN-BARBECUED SPARE RIBS:
3 to 4 lbs. Ribs (country-style)
black pepper (season to taste)
garlic powder (season to taste)
1 lemon (sliced)
1 large onion (sliced)
1 cup ketchup
1/3 cup Worcestershire Sauce
1 teaspoon chili powder
1 teaspoon salt
2 dashes Tabasco Sauce
2 cups water
Place ribs in a large shallow roasting pan, meaty side up. (mine measures 14 x 10 1/2) Season meat with pepper and garlic powder. On each piece place a slice of unpeeled lemon, a slice of onion. Roast in a very hot oven (450 degrees) for 30 minutes. Drain grease from meat pan. Combine remaining ingredients in saucepan and bring to a boil and pour over ribs. Continue baking in moderate oven
(350 degrees) until tender, about 45 minutes to an hour. Baste ribs with sauce every 15 minutes. If sauce gets thick, add more water.

HOT GERMAN POTATO SALAD:
3 lbs. potatoes
1 lb. bacon (reserve bacon fat)
1 onion - diced
1 Tablespoon flour
1/4 cup white vinegar
1/2 cup sugar
salt and pepper to taste
1 cup water
Bring a large pot of salted water to a boil. Add potatoes; cover and simmer until tender, about 20 minutes. Place bacon in a large, deep skillet. Cook over medium high heat until browned and crisp and transfer with a slotted spoon to paper towels to drain. Crumble or chop bacon, set aside.
Pour off all but 3 tablespoons fat from skillet and sauté onion over moderately high heat, stirring, until softened, about 3 minutes. Add flour, vinegar, sugar, salt, pepper and water and simmer 2 minutes. (sauce will be thick)
Add bacon and potatoes to skillet and stir until coated. Cook until heated. Serve warm.

or

BAKED BEANS:
2 large cans Campbell's Pork and Beans
2/3 cups packed brown sugar
1/2 cup ketchup
1 teaspoon ground mustard
2 teaspoons baking soda (optional)
4 to 6 Bacon slices
Mix all ingredients except bacon. Taste if sweet enough. If not, add more brown sugar. Pour into large casserole dish. Top with slices of bacon. Bake at 350 degrees for 1 to 2 hrs or until hot and bubbly and bacon is cooked.

Potato salad for a side dish:
whatever amount of mayo is necessary, add 1/2 as much white vinegar. Finely chopped onions and celery, salt (or seasoning salt) and pepper to taste. Note: taste before serving, as additional salt may be required as it is absorbed by potatoes.

Swedish-style meatballs for a main dish casserole:

Ground beef, onions, eggs, brown gravy and sour cream

I don't know how large a group will be there, so I can't recommend amounts. Both of the above can probably be found in most cookbooks, and you can vary the ingredients if you like.

Ziti with Ricotta and Spinach

This recipe can be doubled.

2 lb. fresh or 10 oz. frozen spinach, chopped and drained
1 lb. ricotta cheese
3 eggs, well beaten
2/3 cup grated Parmesan
1/3 cup chopped parsley
Salt and pepper
3 cups tomato sauce
1 lb. ziti, cooked and drained

Cook the spinach with a small amount of water until it wilts or heats through. Drain and press out any excess moisture.

In a large bowl, combine spinach with the ricotta, eggs, Parmesan, salt, pepper, and 2 1/2 cups of the tomato sauce. With a fork, whip the mixture until it becomes fluffy, and then add the cooked ziti. Spread the remaining tomato sauce on the bottom of a baking dish and cover with the pasta mixture. Bake in a 375 degree preheated oven for about 20 minutes or until heated through. Makes 8 servings.

Or you could make lazy lasagna - made with frozen ravioli, tom sauce & mozzarella. Layer it like lasagna, cover w cheese & bake at about 350 till cooked through.


For a side - Green salad, meatballs, or garlic bread.

Super Macaroni Salad
1 16 oz box macaroni cooked,drained and cooled
1 1/2 cups good mayonnaise (Hellmans, Kraft's,etc)
1 cup white vinegar more or less
1/4 cup shredded carrots
1/4 large green pepper finely chopped
1/8 cup minced onion
1 cup sweetened condensed milk
1/ 2 cup sugar

Pour the macaroni in a large bowl, add the veggies including the onions, set aside. In a smaller bowl mix remaining ingredients, taste, it should have a nice sweet and sour flavor, add more sugar or vinegar until you like the taste. Then pour over the macaroni veggie mix, blend well and put in fridge until ready to serve.



CREAMY CUCUMBER SALAD
3-4 cucumbers, peeled and sliced
1/2 red onion, sliced thin
1 ½ cups Ranch or Cucumber Ranch dressing

In large bowl, combine all ingredients, tossing to coat the vegetables. Place in refrigerator and chill before serving.


RIGATONI AND HAM BAKE
3 c. rigatoni
2 c. diced cooked ham
1 c. shredded Cheddar cheese
1 jar 4 cheese alfredo sauce
1/2 cup milk
1/2 c. crushed ritz crackers
butter

Heat oven to 350 degrees. Boil water (2 quart) in a large deep pot with 2 teaspoons salt and 1 tablespoon oil (to prevent boiling over). Add rigatoni noodles, stir to separate. Cook uncovered until water comes to a full rolling boil for 10-11 minutes, stir occasionally. Drain and rinse under hot water. In a large bowl, combine cooked rigatoni, ham and 1 cup cheese. In a medium saucepan, mix milk with alfredo sauce. Combine sauce with rigatoni mixture. Turn into 2 quart casserole. Sprinkle with ritz crackers and dot with butter. Bake at 350 degrees for 25-30 minutes.

Cheesy hashbrown casserole, my all time favorite (tons of recipes available; I don't have a specific favorite, but prefer the ones that include lots of onion, sour cream, and cream of celery soup

Side dish, green beans or redskin potato salad or a simple tossed salad.

TACO DIP IS ALWAYS A BONUS!!!!!! take a glass 3 inch deep serving dish and spread with cream cheese then take 1 can of re fried beans spread over cream cheese next, 1 pound of cooked hamburger and 1 can of Campbell's cheese sauce mix together pour on top, 1 regular size thing of sour cream and mix with 1 regular size jar of salsa in separate bowl pour over contents next comes lettuce and finally alot of shredded cheese any kind marble prefrebally. And Enjoy!!!!!!!

any good salad of any kind, & a fabulous banana pudding thats really simple (even I can do it without burning anything) need good bunch of bananas, vanilla wafers(a bag or two), either you can use ready made vanilla pudding but I like to use instant vanilla pudding you just add cold milk that is the best. layer them bananas,wafers then pudding so on, then on last layer you can either use some crushed wafers or cool whip with a cherry on top.
