Whatever foods are a good color-contrast... like red meat on the white board, white fish on the red board, and chicken on the blue board.

Color-keyed cutting mats are a great way to avoid cross-contamination, and roll up for easy food transfer (i.e. chop an onion, and simply roll and pour into a pan). Blue is typically for seafood - this includes fish and shellfish. Red is for red meat. There is usually a green one for vegetables. You can use your white for either poultry OR pork OR vegetables. Stick with the system and you will avoid dangerous cross contamination. Most sets include a green mat for vegetables, which I recommend purchasing if your set doesn't include it.

Red: raw meats/Fish (all you need to cook)
Blue: Veggies & fruits (especially veggies for salad)
White: Snacks eg: sandwich, pastry
Remember to use RED only for raw meat to prevent cross contimination. Even if the board is washed with warm soapy water, it is impossible to wash away all bacterias. If you wanna eat raw fish maybe you can line the cutting board with baking paper.

Cutting boards has a finish on them and you can cut all foods on any color of board. Just don't forget to wash with hot water and soap after each food.

It doesn't matter. But since you have three of them, use only one for veggies, and one for poultry and pork, and one for beef. Never mix them up either. Be consistent in which one you use for the appropriate food. This will save on cross contamination. If you've used one for a food already and you can't remember what you cut, soak them all in very hot water with a few Tablespoons of bleach and start over.

Blue- is for Fish dishes,Red -is for Raw meat and White- is for Pastries like Bread etc,,You also get Green for all your Vegetables.Have fun cooking....

That's really sick. Glad I live abroad. Is the UK not a free country? OK so you might want to choose one colour for bread, one for flesh and one for veg, but surely the choice is yours. I use blue J-cloths in the bathroom and green ones in the kitchen, but that's my choice. It wasn't ordained by the central government.

I hope they are not glass for a start, they are crap, blunt your knives. Depends how much regular food you chop up. You cant have onions being chopped on the same board as your melon starter, or delicate chicken breast being cut on the same board as your morning kipper. I keep one for meat/veg, on the other side is for fruit, then a seperate one for fish.
