I have no meat in the house other then tuna. Please give me some ideas of things I could make for dinner that will still please the meat eater of the house.

Easy Tuna Noodle Casserole

2 cans tuna fish
2 cans cream of mushroom soup concentrate
Boiled noodles
Mix together drained tuna fish, cream of mushroom soup concentrate and boiled noodles.
Transfer into an oven-safe dish.
Bake into a preheated 350°F [180°C] oven, for 45 minutes.

Cheesy Tuna Mornay



"A cheesy Mornay with peas and corn. A great quick dinner that has everything in one dish."

Original recipe yield:
6 servings

PREP TIME 30 Min
COOK TIME 20 Min
READY IN 50 Min


INGREDIENTS
1/2 cup uncooked rotini pasta
1 tablespoon butter or margarine
2 tablespoons all-purpose flour
1 1/2 cups milk
2 cups shredded Cheddar cheese
1 cup frozen green peas
1 cup frozen corn kernels
2 (7 ounce) cans tuna, drained
salt
1/2 cup bread crumbs
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C). Bring a pot of lightly salted water to a boil. Add the pasta and cook until tender, about 8 minutes. Drain.
Meanwhile, melt the butter in a small saucepan over medium heat. Stir in the flour until smooth. Gradually mix in milk so that no lumps form. Stir constantly until the mixture boils, then mix in half of the cheese. Add the peas, corn and macaroni. Drain the tuna, leaving a small amount of liquid to keep it moist. Flake with a fork and stir into the cheese mixture. Transfer to a casserole dish and top with the remaining cheese. Sprinkle breadcrumbs over the cheese.
Bake for 20 minutes in the preheated oven, until sauce is bubbly and cheese is browned.

Try my Spicy Tuna recipe (it doesn't really have much of a tuna flavor): 1 can of tuna in spring water (drained well), 2 Tablespoons mayo, 1/2 teaspoon lime juice, 1/8 teaspoon cayenne pepper, 1/8 teaspoon ground cumin, 1/2 teaspoon dried cilantro -crushed (grinded up between your palms). Mix well & roll up in a potatoe Lefsa, eat in a whole wheat pita bread with lettuce, on wheat thins, or just whole wheat bread. Serves 2. Double recipe for more! :)

TUNA NOODLE CASSEROLE
1 1lb. bag egg noodles
2 tbsp. butter
2 cans water packed tuna, do not drain
1 can cream of mushroom or cream of celery soup
1/2 cup sour cream

Boil noodles according to directions, drain. Add butter, tuna, soup and sour cream, mix well. Store leftovers in freezer.

For this recipe, replace the salmon with 2 cans of drained tuna.

Salmon Patties
1 can salmon, bones removed
1 egg, beaten
1/4 onion, minced
1/2 sleeve saltines, crushed fine
1/2 tsp seasoning salt, garlic salt or cajun seasoning

In bowl, combine all ingredients, mixing well. Form into patties and fry in oiled skillet.

Classic Tuna Noodle Casserole
1 can (10 3/4 oz.) Campbell's Condensed Cream of Celery Soup OR 98% Fat Free Cream of Celery Soup
1/2 cup milk
1 cup cooked peas
2 tbsp. chopped pimiento (optional)
2 cans (about 6 oz. each) tuna, drained and flaked
2 cups hot cooked medium egg noodles
2 tbsp. dry bread crumbs
1 tbsp. butter OR margarine, melted
PREHEAT oven to 400°F. MIX soup, milk, peas, pimiento, tuna and noodles in 1 1/2-qt. baking dish. BAKE 20 min. or until hot. Stir.
MIX bread crumbs with butter. Sprinkle on top. Bake 5 min.

TIP: *Or use Campbell's Cream of Mushroom OR 98% Fat Free Cream of Mushroom Soup.

Serve with your favorite frozen vegetable combination. For dessert serve ice cream.

To melt butter, remove wrapper and place in microwave-safe cup. Cover and microwave on HIGH 30 seconds.

Baking Powder Biscuits
2 cups unbleached all-purpose flour
1 tablespoon baking powder
1 teaspoon granulated sugar
1 teaspoon salt
1/3 cup vegetable shortening
About 3/4 cup milk
Melted butter for brushing tops of biscuits
Preheat oven to 425*F ( 220*C).
In a mixing bowl, combine flour, baking powder, sugar and salt. Cut in the shortening using a pastry blender until the mixture resembles coarse corn meal.
Using a fork, stir in just enough milk so that dough leaves side of bowl and rounds up into a ball. (Too much milk will result in sticky dough, too little and biscuits will be dry.)
Turn dough out onto a lightly floured surface and knead lightly a few times, about 30 seconds.
Roll to 1/2 to 3/4-inch thickness and cut with a floured 2-inch biscuit or cookie cutter. Place on a lightly greased baking sheet about 1-inch apart for crusty sides, or together for soft sides.
Brush tops liberally with melted butter.
Bake 12 to 14 minutes or until lightly browned. Remove immediately from baking sheet and serve hot.
Makes about 1 dozen biscuits.

Cook's Note: There's no law that says biscuits have to be round. For quicker, easier biscuits, roll dough into a 1/2 to 3/4-inch thick rectangle and cut evenly into square biscuits. This eliminates having to re-roll the scraps when using a biscuit cutter.
