God is not "a man" or "of man" (just like Numbers 23:19 says) however, he gave us his son Jesus, part of himself in the image and form of a man. (That doesnt mean that God is "only a man" because he isnt, He's God)
Adam is God's son because Adam was the first man on earth. Adam cant not have a father because he did not create himself, God did. Therefore, God is his only father.
The reason people say the "s" is lowercase is because even though he's "created by God" and therefore is the son of God, he is not OF God. Jesus, God's Son with a capital "S", christian's believe, was God in a human form or appearence.
Also - many other languages, other than semetic ones, don't use capital letters as much as we do in English. In Englsih we capitalize proper nouns - many other languages do not.
In Greek and Hebrew (which is what the Bible was written in) they have many different words for one English word. There are three different words for the english equivalent "love"- all describing different types. Hebrew, or Greek in the case of the book of Luke, probably has two or more words for the word "son" (one to express the uppercase "Jesus" and one to express the lowercase)

Numbers 23:19 will be taken out of context if you don't read the entire passage. So, my suggestion is to go back and re-read the entire passage. If you have a question after doing so...come back here and post it.
Luke 3 is talking about the lineage of Jesus. Adam was considered God's son. We are his children. Adam goofed things up...so God had to come here and fix things. Jesus was the son of God. Jesus is also God in the flesh.
Which takes us to the trinity. Although the word "Trinity" is not found in the Biblical text, in Matthew 28, Jesus when talking with his followers tells us to go out to all nations and baptize in the name of the Father, Son, and Holy Spirit. The teaching is there in the Biblical text, just the word "Trinity" doesn't appear.
The mystery of the Trinity is to be explored and prayed about.

Hi Ty - this is a legitimate question and you've got some pretty good answers so far, but if you don't mind, I'd like to give a little more explanation.
Kristina has given you the clearest answer thus far, but let me expound on that a bit.
Adam was made in God's own image and likeness, being formed of the dust of the ground. He was not birthed by any mother, and his maker was most certainly God and God alone.
Y'shua (Jesus) is called "the only begotten son of the Father" (John 1:14,18; John 3:16,18; I John 4:9) meaning he is the only son God fathered through a woman (Mary).
Y'shua (Jesus) existed BEFORE he was born of a virgin:
In the beginning was the Word, and the Word was with God, and the Word was God. I John 1:1
And the Word became flesh and dwelt among us, (and we beheld his glory, the glory as of the only begotten of the Father,) full of grace and truth. John 1:14
Every other man was born of a human father and human mother. Only Adam and Y'shua were born (or made, as it were) of their Father (Maker) God.

because there are different senses of the words
as far as Numbers: the point is God is not a fallible man who changes His mind and flips His position
as far as Luke: Adam was a son of God in a different sense than Jesus. Jesus is Son of God from eternity, Adam was a son of God from creation.

In the old semitic language to say that someone was the "son of..." was a way of identifying that person. It did not have to do with their genetics. Peter and John were called "sons of thunder". Jesus referred to several pharisees as the sons of their father the devil. It is a way of saying that the person is highly identified by that characteristic. Jesus was called the son of God and the son of man. For two reasons. One he is identified by the characteristics of both. But also in this case He was born of the Holy Spirit and of The virgin Mary.

1st. God created man therefore he is father to all of us.(Adam, Seth, You, Etc.)
2nd. God created man therefore he can not be a man or a son of man.
3rd. Jesus the son of God is truely God's spirit in a human body. "God, Jesus, and the Holy Spirit are one and the same".
The bible was not orginally in English, 1st English translation was by King James.

Jesus is the only begotten son of God.
Col. 1:15, Rev 3:14, show that Jesus is the only son directly created by God.
All other sons, and the angels are called sons of God, were created with the aid of Jesus.
John 1:3"All things came into being through Him, and apart from Him nothing came into being that has come into being. "

In the OT, they were referring to God the Father, who, it is true, is neither man nor a son of men. God the Son (Jesus Christ) is referred to both as "Son of God" and "Son of Man".
Adam was a "son of God" because God created him directly - Adam was not born of a woman, as everyone else on Earth was. However, Adam fell, but Christ did not. "As in Adam all die, but in Christ all are made alive." If Adam had never fallen, he would be the "son of God" today - he would be the patriarch of this planet. He and his offspring would have lived forever.

The term son of God is common in the Bible. The angels are called sons of God in Job. Believers are called sons of God in Galatians Chapter 3 and Romans Chapter 8. Jesus Christ is called the "only begotten" Son of God - meaning His Sonship was unique and distinct from others.(see John 1:14,18; 3:16,18) As I understand the Scriptures, there are 2 "begettings" of the Son - One in eternity, when He was brought forth from the same substance as the Father. This is typified in the creation of Eve from Adam. Eve was brought forth independently of Adam, but was of his own substance.
The second "begetting" of the Son occurred when Jesus Christ was raised from the dead. This is what the passage in Psalm 2 is referring to, according to the Apostle Paul, saying: "You are My Son, today I have begotten Thee" (see Psalm 2:7 and Acts 13:33)
Christians are sons of God only through their identification with Jesus Christ in His death, burial and resurrection.
Jesus said "You must be born again !" (John 3:7)
