Can anyone tell me which of his recipe books it is in and what it is called? (or a website with Gordon's recipe on). I know I have used it and it is one of my recipe books but I simply cannot find it.

It's called Hot Chocolate Fondant and you will find it in his book "Gordon Ramsay Makes it Easy", page 220!

Here you go.... Gordon Ramsay's 4-minute Chocolate Mousse Ingredients * 150 g dark chocolate * 250 ml creme fraiche * 284 ml double cream * 25 g icing sugar, sifted * 1-2 tablespoon coffee liqueur (optional) * 64 g chocolate (crunchie frozen for 10 minutes) Directions 1. Break the dark chocolate into small pieces (reserving 25g for grating later) and place in a bowl that fits snugly over a pan of boiling water. Leave until the chocolate has completely melted and then remove from the heat and set aside. 2. Add the crème fraiche to the melted chocolate and whisk until combined. Put the double cream and icing sugar into a separate bowl and whisk with an electric whisk until it forms soft peaks. Fold the chocolate mixture into the cream, add the coffee liquer and stir to combine. 3. Remove the chocolate covered honeycomb bars from the freezer, remove the packets and wrap them in a clean tea towel. Place the tea towel under a chopping board and press down hard on the chopping board to crush the honeycomb. Open up the tea towel and tip the crushed honeycomb into the mousse and gently fold through with a spatula. Spoon the mousse into four small serving dishes and then grate over the remaining chocolate and serve.

I think what you are looking for is a recipe for Chocolate fondant. Great dessert. Heres the recipe that he uses and we copied in our restaurant.

2 ounces bittersweet chocolate, chopped into small pieces
4 1/2 tablespoons unsalted butter, cut into small pieces
2 eggs
1/3 cup sugar
1/4 cup sifted all-purpose flour.

Vanilla ice cream, for serving
Fresh raspberries, for serving

Position a rack in the lower third of an oven and preheat to 450ºF.

Grease two 6-oz. ramekins and dust lightly with cocoa powder.
In a medium heatproof bowl, combine the chocolate and butter.

Set the bowl over but not touching simmering water in a saucepan and melt the chocolate and butter, stirring often, until smooth and blended. (Do not overcook.) Let cool to room temperature.

In a bowl, whisk together the eggs and sugar until completely blended and frothy.

Using a large spatula, gently fold in the chocolate mixture until smooth and blended.

Sift half of the flour over the batter and gently fold together until just blended, then repeat with the remaining flour.

Divide the batter among the prepared ramekins and bake until the tops are just firm when lightly touched, 10 to 12 minutes.

Serve warm with the vanilla ice cream and raspberries.

I think it may be a Nigella Lawson recipe called sticky chocolate pudding which has a delicious liquid chocolate sauce running through it like a molten chocolate volcano, and is very easy to make.

I think it is his chocolate fondant (which may help you to find it). I know he did this on the f word recently, so you could try channel 4's website for the show. Good luck with finding it.

go to marks and spencers they sell puddings like that and they are gorgeous!
