The reason for pineapple is that it has enzymes in it that break down the gelatin (protein), so it won't set up. I was thinking other citrus fruits (oranges, grapefruit) won't work, too, but I'm not sure why that would be.

Pineapple, papaya, kiwi,
Pineapple contains bromelain and papaya contains papain. Both are enzymes also used as meat tenderizers. Remember that Jello is made from beef gelatin (animal protein) which is basically meat.

Just raw pineapple......canned or cooked may be used. I use pineapple in my jello salads all the time....

Pineapple that has not been canned. In other words, the 'raw' pineapple contains an enzyme which digests protein and so Jell-O will be liquified .

You shouldn't put pineapple, kiwi or papaya in jello. They prevent it from setting.
