My mom & I are having a disagreement about this. A week before Christmas my mom made sausage & meatballs to be used in Christmas dinner. She bought them around the 16th & cooked them exactly a week before on the 18th. She left them in the fridge until Christmas (8 days) put them in sauce (made 4 days prior) & served them. I tasted one on Christmas & it did not taste right to me nor my sister. I am picky however. So, then now 2 weeks has passed since Christmas apprx. These sausage & meatballs in the sauce have been sitting in the fridge, not freezer. She just called me & asked me to cook them all tonight in one big pot & after they were cooked to freeze them. They are going on vacation & said they would eat them around the 16th of January. I think it is gross. She thinks I am absurd. Is it safe to have meat & sausage refrigerated for 3 weeks, then freezing for 3 more to eat???

ok, that's totally gross! you're only suppost to keep cooked meat for like 3-5 days after it has been cooked. and if it sat out on the counter or anything for 2 hours or more you're suppose to throw it away! i would definately NOT cook that meat again! throw it out. Tell your mom you dropped it all on the floor or something!

No, it is not safe. You can cook meat or sausage or any other food, leave them in the refrigerator for 1 or 2 days before you heat them up again. Or heat up only the amount you actually eat and freeze the rest right away. Any time you heat food up you should eat it and not freeze it over and over again.

Cook, refrigerate 1 or 2 days, heat and eat
or Cook, let cool and freeze, defrost, heat and eat. Don't freeze it again.

Too much bacteria can enter food if it stays too long in the fridge. You can get digestive problems or even salmonella.

The food items should have been frozen as soon as possible, and not refrigerated for 3 weeks. Knowing these circumstances, I would not be eatting that food. I go by the old saying, "When in doubt, throw it out."

Freezing is safest when meat is the freshest.
After a few days, it should be cooked and eaten. It can be frozen after being throughly cooked.

Those products are already contaminated. Throw 'em out.

NO... that is way to long to have meat in the fridge. I would throw every bit of it in the trash. If not your mom is aking for a serious case of food poisoning.

pork is easy to go bad and can make you very sick so please beg your mom to dispose of those. refrigeration is only temp and not days but weeks have gone by?! If she doesn't believe you have her call the local meat department and ask the butcher.
