Why is it that putting it in a bag stops it from going stale as opposed to leaving it out?

The primary reason bread goes stale is because of the modification in its starch molecules. When bread is baked, the heat changes it of molecules during the cooking process so that the water is absorbed. After bread is baked, the starch molecules begin to become tough as it loses moisture.

The best way to maintain the freshness of bread is in the freezer.

the air makes it go stale because it "sucks" out the moisture. the bread in the bag with hardly any air helps perserve it becoause it holds moisture in

The moisture evaporates into the air when it is left out. If it's in a bag, it helps the bread to retain it's moisture.
