Black Pudding Irish Recipe
1 lb Pig's liver
1 1/2 lb Unrendered lard, chopped
120 fl Pig's blood
2 lb Breadcrumbs
4 oz Oatmeal
1 Medium onion, chopped
1 ts Salt
1/2 ts Allspice
Beef casings
(Always served with an Irish "fry". The preparation of this pudding
may be impractical these days due to the difficulty of procuring fresh
pig's blood and casings.) . Stew liver in boiling salted water until
tender. Remove liver, and mince.
Reserve cooking liquor. Mix all ingredients in large bowl. Stir
thoroughly until blended. Fill casings with mixture. Tie off in
one-foot loops. Steam for 4-5 hours. Leave until cold. Cut into
1/2 inch slices as required and fry in hot fat on both sides until
crisped.

Is it good? You don't eat it because it's good. You eat it to see the look on other peoples faces! You want my recipe for Haggis?
Blood Pudding
1/2 lb of pigs liver
1 1/2 lb of lard, chopped
15 cups of pigs blood (no drinking this while you cook)
1 lb of bread crumbs
2 1/2 cups of water (use the water left over from cooking the liver)
1 cup of rolled oats
1 onion, chopped
1/2 tsp allspice
1 tsp sage
1 tsp thyme
Salt and pepper
Poach the liver in boiling salted water. Drain it and keep 2 1/2 cups of the water. Chop up the liver. Mix all the ingredients in a bowl. Pack into an oiled heatproof bowl. Cover with wax paper and aluminum foil. Tie the foil down securely over the bowl. Steam for 4-5 hours. Remove it from the bowl and let sit until cold. Cut into disks about 3/4 inch thick and 2 inches round, like cookies. Fry until crisp on both sides. Serve with bacon, sausages, fried eggs, grilled or fried tomatoes.

12 ounces bread crumbs
1/2 lb. suet
Salt and pepper, to taste
1 quart milk
1 cup cooked barley
1 cup dry rolled oats
1 ounce ground mint
PREPARATION:
Mix all ingredients together in a bowl; pour into a large kettle or Dutch oven and bring to a boil. Pour into a wide shallow bowl and season again if necessary. Chill thoroughly, until firm. When cold it may be cut into slices and fried.

INGREDIENTS:
3 quarts pork blood
1-1/2 pounds raisins
1-1/4 pounds sugar
1 pound mixed nuts & chestnuts
3/4 pound rice--cooked
2 oranges with all rind
1 pound figs
1 teaspoon red pepper
1 teaspoon black pepper
2 tablespoons salt
bay leaf

DIRECTIONS:
Mix all and bake in oven for one (1) hour.
--------------------------------------------------------------------------------
COMMENTS:
This pudding was made when the hogs were slaughtered
on the farm.
Although this may sound strange to us today,
"Blood Pudding" was a common dish during the earlier
part of this century. When a hog was slaughtered,
nothing went to waste.

im irish, and my family is from ireland, and maybe we just skip over those but i know that those arent ingredients in traditional irish cooking... its mostly meats, potatos, and root veggies.
