They're just hard boiled eggs cut in half lenthwise and then the yolk is removed and combined with mustard and mayo and put back into the white part of the egg...very good snack.
Deviled Eggs
Serves 2; Prep Time: 10 minutes; Total Time: 25 minutes
4 large eggs
2 tablespoons reduced-fat mayonnaise
1/2 teaspoon Dijon mustard
1/2 teaspoon white-wine vinegar
Dash of hot sauce
Coarse salt and freshly ground pepper
1. Place 4 large eggs in a small saucepan; add water to cover eggs by 1 inch. Bring to a boil. Remove pan from heat; cover, and let stand 13 minutes. Drain; rinse eggs under cold water. Peel eggs; halve lengthwise. Remove yolks leaving whites intact; place yolks in a medium bowl.
2. Add 2 tablespoons reduced-fat mayonnaise, 1/2 teaspoon each Dijon mustard and white-wine vinegar, and a dash of hot sauce; season with coarse salt and ground pepper. Mash together with a fork until combined.
3. Spoon filling into egg whites; sprinkle with thinly sliced scallions or paprika.

First hard boil the eggs. Fill up a large saucepan half-way with water and gently add the eggs. Cover the eggs with at least an inch of water. Add a teaspoon of vinegar to the water (this will help contain egg whites from leaking out if any of the shells crack while cooking). Bring the water to a boil. Cover, and remove from heat. Let sit covered for 15-17 minutes. Drain hot water from pan and run cold water over the eggs. (At this point if you crack the egg shells while the eggs are cooling, it will make it easier to peel the shells.) Let sit in the cool water a few minutes, changing the water if necessary to keep it cool.

Others here have told you basically what they are: Hard boiled eggs with the yolks glorified in some way and put back in the whites for serving. Slice the eggs from north pole to south. Deviling them is the inclusion of whatever YOU think will taste good in there. I generally use real mayonnaise (not that Miracle stuff! yuck!) and finely chopped bacon, herbs, onion or scallions, caviar if you have some hanging around (haven't we all?) etc.
They can be easy or elaborate, fancy or plain.

the way I make deviled eggs is boil some week old eggs, peel them and cut in halves remove yolk . . Chop up some onion, ham and pickles and mix these with the yolks along with mayo (I prefer miricle whip) 1 Tablespoon, a smudgin of mustard and mix and mash then put dolups of this mixture back into the eggs top with a little paparika and eat. for a party I would even dress them up with little sprigs of parsley . . yes they are good

They're boiled eggs, peeled, halved, and the yolks scooped out. Then the yolks are smashed with mayo, mustard, relish, a bit of vinegar, and dill. The mixture is put in the little cup in the halved egg.

You boil the eggs and when they are finished shell them and cut them it half. spoon out the yokes and mix with mayonnaise yellow mustard and paprika pepper .then spoon the mixture back into the eggs and put the whites together so they look like they are simply boiled eggs.

hard boiled eggs. carefully slice the egg in half and remove the yoke and mix in bowl with mayo and eggs place back in the egg white part..... mmmmmmm devily delicious.
