What is the ingredient in a peanut butter cookie that makes it chewy? All mine come out crispy or crumbly. Is it shortening? Butter? Eggs?

It depends on cooking time, temperature and how much fat you have in the recipe. Underbake your cookies a little and they'll be soft. You are probably just baking them too long.

I've made mine with shortening, butter, and a combo of the 2. The trick is this: Stick with the butter,whip the sugars and butter for at least 4 minutes. Add your eggs, and beat the mixture for at least 5 minutes (really helps to have a stand mixer), then thoroughly mix in your peanut butter, and continue recipe instructions. Form the dough into balls and then chill for at least an hour before flattening and baking. You should be able to bake the cookies for the full amount of prescribed time. The cold dough allows the outside to cook at a much faster rate rate, leaving the center more moist --Raw should not be confused with Chewy! Bon apetit!

I think, maybe you're over baking them. With most cookies, of any kind, baking them for the maximum baking time in the recipe, makes crisp and often crumbly. But baking them for the minimal time or some amount in between the two, makes them soft and chewey. If your recipe says 10 to 12 minutes, try baking them for 10 minutes, or even 11 minutes. My prob is when I try to lightly mash the peanut butter cookies with a fork, they end up getting too mashed.

Don't over bake it. Pull them out of the oven before the finger test of touching the top to see if it springs back. It will leave them chewier.

if you put your crispy ones in a bowl with lid put two pieces of white bread in overnite they are soft in morning
