When you scan, study the options and set your preferences.
With my Dell AIO, to scan a photo, I save to My Pictures as a jpg.
They will be sent to my Print Shop photo editing program.

To scan a document with the intention of editing it in Word, you have to scan with OCR (optical character recognition). This will scan the document and send it to Word where you will immediately click File, Save AS and give your file a name.

Once in Word, you must proofread. Any marking on the original document will scan as a tilde or some other character. Also, unless the original document is a good, clean print and the characters are clearly legible, a character here and there will be incorrect. However, the greater percentage of the document will be correct.

Take a few minutes. Open your scanner and study all the options -- with one eye on the cancel button if you are not sure what you are doing.
