There have only been a few 5 star flag officers, (general or admiral), but the only admiral that I know of was Chester Nimitz, Commander in Chief, Allied Forces, Pacific Theater, during World War Two. The Five star rank coould only have come after the four star rank of general was added, so it had to be this century, not many oppurtunities.
Sorry, just found this. There were four five star (Fleet Admirals) in the Navy during world war 2.

There have only been four army 5-star general Generals Marshal, MacArthur, Eisenhower and Bradley.
The air force has had one five star general, General Hap arnold, who was actually awarded the rank twice, once in 1944, while it was still the Army Air Force, and again in 1947 after the AAF had been separated and redesignated the United States Air Force

There are no 5 star generals right now. You are correct that this rank is only provided during a time of war, but that is defined as requiring an Act of War, which is issued by Congress. Currently, there are numerous 4-star Generals, they are commanders of major theaters or support commands (SOUTHCOM, CENTCOM, PACOM, EUROCOM, TRANSCOM, FORSCOM, TRADOC etc.). In addition, there is a 4-star representative from each component serving on the the Chiefs of Staff. Yearly, one of these is elevated to the position of Chairman of the Joint Chiefs of Staff and is considered the senior military person in the Armed Forces. Currently it is a U.S. Marine named General Peter Pace.
