Drink what you want and like!
If you don't like dark red wines and are having steak, then drink a white. By all means, experiment for yourself, but don't limit yourself to one type of wine for any particular dish.

Hello,
Here are some classic wine pairings from the the dishes you mentioned.
Salmon - Pinot Noir
Italian - a wine from the same region of Italy the dish is from (Northern Italy etc.)
Steak - Cabernet Sauvignon, Merlot or Bordeaux style blends (a mixture of Cabernet, Sauvignon, Merlot, & Malbec, Petite Verdot and or Carmenere).

Beef/Duck/Lamb: Medium to heavy red wine like Cabernet Sauvignon
