My husband and I like them baked and served with steak or whatever else we grill in place of regular sweet potatoes. I also like to chop them up and toss them with sliced parsnips and EVOO and roast them.

I agree with a lot of the posts here.. I cut up my sweet potatoes into bite sized cubes, rub them with some olive oil and a little salt and roast them and then serve them with pork chops or a herb crusted pork tenderloin. Since pork is a mild and sweeter tasting meat, it compliments the sweeter taste of the sweet potato. Happy cooking !

pork loin roast w/rosemary-garlic based crust, BBQ pork tenderloin, roasted chicken (ditto on the rosemary/garlic seasoning), turkey breast or breast tenderloins - try them on the grill, spicy hot fish dishes...
