PINEAPPLE UPSIDE DOWN CAKE
INGREDENTS
2 OZ BUTTER
2OZ BROWN SUGAR
8 OZ TIN PINEAPPLE RINGS
4-5 GLACE CHERRIES
6 OZ SELF-RAISING FLOUR
4 OZ BUTTER OR MARGARINE
4 OZ CASTER SUGAR
METHOD.
1.Grease an 7 inch round cake tin. Cream together the browwn sugar and butter and spread over base of tin.
2. Arrange pineapple rings on top, placing a glace cherry in the centre of each ring..
3. Place remaining igredients in a mixing bowl and combine with a electricmixer until fluffy.
4. Spoon mixture over pineapple rings. Cook on 180 oC or gas mark 4 for 35-45 minutes
5. Turn out cooked cake onto a serving dish and serve.

This is how I make it.
Buy a pinapple or vanilla cake mix. Coconut would interesting too. I always use pineapple juice for the water. Just for a little added flavor. I also add a TB of lowfat mayo to the batter when I'm mixing it. This makes it extra moist.
Mix as directed on the cake.
Spray your pan with cooking spray. Add a layer of brown sugar and dot with butter. Add pineapple rings. Add one marashino cherry to the middle of each ring. You might have to cut a few rings to fit. Pour your prepared cake batter over this mixture and bake according the box.
While the cake is still warm(after 10 min out of the oven) put a platter that fits over your pan and invert. Make sure it has a little room for any extra juice.

Pineapple Upside-Down Cake
"This recipe was given to me by a good friend in Hawaii. She always uses fresh pineapple, the end product is delicious. Very yummy served with ice cream or whipped cream as an accompaniment."
Original recipe yield: 1 - 9 inch round cake
INGREDIENTS
1/2 cup unsalted butter, melted
2/3 cup packed brown sugar
3 cups fresh pineapple - peeled, cored and cut into 1 inch chunks
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup unsalted butter, softened
2/3 cup white sugar
2 eggs
1 teaspoon vanilla extract
3/4 cup milk
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C).
In a small bowl stir together the melted butter and the brown sugar; spread the mixture evenly in a well buttered 9 inch round cake pan. Pat the pineapple very dry between several sheets of paper towel, and arrange it evenly on top of the sugar mixture.
Sift together flour, baking powder, salt, and cinnamon.
In a large mixing bowl, cream the softened butter with the sugar until the mixture is light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla. Add the flour mixture in three parts alternately with the milk, beginning and ending with the flour mixture. Beat well after each addition. Spread the batter evenly into the prepared pan.
Place the cake in the middle of the oven. Bake for 45 to 55 minutes, or until a tester comes out clean. Let the cake cool in the pan on a rack for 15 minutes. Run a thin knife around the edge, and invert the cake onto a plate. Serve the cake warm or at room temperature.

Ingredients
110g/4oz plain gluten-free flour
2 tsp baking powder
110g/4oz butter, softened
55g/2oz caster sugar
2 eggs
butter, for greasing
3 tsp soft brown sugar
3 pineapple rings
double cream, to serve
Method
1. Preheat an oven to 200C/400F/Gas 6.
2. In a large mixing bowl, or food processor, mix together the plain flour, baking powder, butter and sugar.
3. Add the eggs, one at a time.
4. Grease three blini pans with the butter, and add a teaspoon of soft brown sugar into each. Now place a pineapple ring on top of the sugar, in each pan.
5. Divide the cake batter among the three blini pans, then place in the oven for 18 minutes, or until the cakes are cooked.
6. Turn out onto a plate, and serve with double cream, to your taste
or Ingredients
½ pineapple, peeled and sliced thinly into rounds
55g/2oz caster sugar
170g/6oz self-raising flour
2 free-range eggs
5fl oz/¼ pint milk
55g/2oz caster sugar
handful fresh mint leaves, shredded
Method
1. Preheat the oven to 220C/425F/Gas 7.
2. Place the pineapple slices and the sugar into a small, oven-proof non-stick-frying pan. Heat gently until the sugar has melted and the pineapple is caramelised.
3. Meanwhile, whisk the flour, eggs and milk together in a bowl. Stir in the sugar and the mint leaves. You should have a thick mixture, the consistency of whipped cream. Add more milk if necessary.
4. Pour the mixture onto the pineapple and then transfer to the oven and bake for 15-20 minutes, until the sponge is golden and springy to the touch.
5. Remove from the oven and turn out onto a plate to serve.

They have mixes for it at the store or you can melt about half a stick of butter in a round cake pan, sprinkle liberally with brown sugar, then place pineapple rings in a circle on top of the sugar with one ring in the middle of the pan. Put cherries in the holes of the pineapple rings. Then use a yellow cake mix (or white) that you have made following the box instructions and pour on top of the pineapple, cherries, butter and brown sugar. bake as directed on the cake mix. When it's done, place a plate or platter on top of the pan and gently flip it over while it's still hot, but leave the pan in place so that all of the glaze can drip onto the cake. after about 20 minutes you can remove the pan. You may need to remove any glaze left over with a spatula and put it on the cake. Very good!
You will probably need to make two upsidedown cakes as the cake mix you buy will be enough for a layer cake or two round cake pans.

My best advice for the ease of it would be to buy a pineapple cake mix and then follow the remaining recipe instructions given such as grease the pan, then line it with pineapple rounds sift brown sugar on it and place cherries in the holes. then fill the rest of the batter on the top. The cake box should have Pineapple/upside down cake recipe on their box.
Man, it makes me wanna make one now!

This is how I make it...
PINEAPPLE UPSIDE-DOWN CAKE:
1/2 cup margarine (1 stick) melted
1 cup brown sugar
1/2 cup walnuts (chopped)
1 can pinneapple slices (reserve syrup)
1 jar maraschino cherries
1 cup sugar
1 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
3 eggs
1/4 cup pineapple syrup
1 teaspoon vanilla
Place the butter, brown sugar and walnuts in a frying pan and melt until it boils or bubbles. A cast iron pan works well because it's heavy and will be less likely to scorch. Place pineapples in the sugar mixture. Put cherries in the center of each pineapple. Cut the slices of pineapple into halves and line the sides of the frying pan with them (standing up on edge). In a bowl, combine sugar, flour, baking powder, salt and set aside. In seperate bowl, beat eggs until fluffy. Combine eggs, pineapple syrup, vanilla and
dry ingredients; mix until smooth. Pour batter into the pan being careful not to disturb the pineapples and cherries. Bake at 350 degrees for 35-45 minutes. Remove from oven and allow to stand for a few minutes to set and loosen the edges with a butter knife. Turn it upside down onto a serving dish. Serve while still warm.

EASY PINEAPPLE UPSIDE- DOWN CAKE Use a box of yellow cake mix and follow directions on box; except instead of using the water, use the juice from a regular size can of sliced pineapple. Measure out the juice so that it equals amount of water that you would have used. Preheat oven to 350 degrees and spray a 13x9 inch pan with cooking spray. Combine 1 and a half stick of melted margarine with a cup of brown sugar. Spread over bottom of pan and arrange pineapple slices on this; placing a cherry in center of each slice. Pour batter over and bake according to directions on cake mix box. Cool for fifteen minutes on wire rack and loosen sides of cake with a butter knife before inverting onto serving plate. Enjoy!!! Any standard cookbook or recipe site (www.allrecipes.com, for example) will have a recipe for it. If you would rather go the easy/quick route, Duncan Hines makes a pineapple upside down cake mix. It's in the section with the other cake mixes. Just look for the one with the pineapple on the box. :)

Dream Pineapple Upside-Down Cake
Prep Time: 15 min
Total Time: 1 hr 10 min
Makes: 16 servings
3 cans (8 oz. each) pineapple slices in juice, undrained
1 cup firmly packed brown sugar
1/3 cup butter or margarine, melted
6 maraschino cherries, halved
1/2 cup PLANTERS Chopped Pecans
1 pkg. (2-layer size) yellow cake mix
1 envelope DREAM WHIP Whipped Topping Mix
4 eggs
1 cup cold water
PREHEAT oven to 350°F. Drain pineapple, reserving 2 Tbsp. of the juice; set aside. Mix brown sugar and butter in 13x9-inch baking pan. Arrange pineapple slices in pan, cutting slices if necessary to evenly fit onto bottom of pan. Place cherry half, cut side up, in center of each slice. Sprinkle with the reserved pineapple juice and pecans.
BEAT dry cake mix, dry whipped topping mix, eggs and water in large bowl with electric mixer on low speed 2 minutes. Beat on medium speed 4 minutes. Carefully spoon into prepared pan.
BAKE 50 to 55 minutes or until top springs back when lightly pressed. Let stand 10 minutes; invert onto serving plate. Let stand 1 minute; remove pan. Serve warm or cooled.
