malaysia airlines usually pretty good, good legroom and if you want a stopover they will give you free flights within malaysia if you book the hotels through them (megacheap better than tour ops prices!). The cheapest airlines are royal brunei, china eastern, korean air, japan, but all nondirect and sometimes have long stopovers if you want direct qantas have good deals but the flights go on sale 11 months before departure so hurry up or there wont be any seats left! Sometimes flying to sydney is cheaper than melbourne and then you could either get a virgin blue (budget flight) ticket from sydney to melbourne hire a car and drive the distance or catch an overnight train (with a bed) really cheap. Best australian tour ops to call are ausbound. austravel and trailfinders

There are several companies that you can fly for about £700 return if its short notice, maybe cheaper if you are booking in advance. I usually find searching Expedia or similar then going direct to the cheapest airline shown on there gets you the best deal, I've done this several times now for international flights. I few with Malaysia Airlines to Australia, no complaints, would use them again - Kuala Lumpur airport is a nice place for a stopover as well.

Also try www.opodo.co.uk for comparing flights.

If you can get £700 you're probably doing quite well! I think you can get some very lastminute deals for around £500 at times. February is still peak time for travel to Oz, generally anything before Easter/April is peak.

No problem usually going into and out of different cities due to the vastness of the country.

I believe Emirates do some cheap flights although I've not flown with them.

verify each achievable airline. Air fare pricing is amazingly fluid. There aren't any guarantees that anybody airline will consistently furnish the most inexpensive fee, on a route, at any given time.
