Simple recipe...makes two so you can freeze one because everyone know leftover meatloaf tastes best :) Mix 3lbs ground chuck, 2 cups of Stovetop chicken stuffing, 3 eggs and 2/3 cup honey BBQ sauce. Form into 2 loaves and bake at 350 for about 50 min. About 10 minutes before done, brush with additional BBQ sauce. One of my son's most requested meals.

Italian Meatloaf:
2 lbs lean burger
1 can Hunts meatloaf sauce
I egg
1 cup italian breadcrumbs
I jar ragu pizza sauce
1 package provolone cheese
1 jar black olives
1/2 to 1 package pepperoni
Mix first 4 ingredients in bowl until well blended. Pat out your meatloaf and add 1/2 jar pizza sauce, black olives, and provolone cheese. Beginning rolling up the meatloaf (like a jellyroll) Place in 350degree oven for 1 hour. After 1 hour top the meatloaf with the remaining pizza sauce and bake another 20-30 minutes. When you cut this meatloaf you see all the great ingredients and it is very yummy!

AppleSauce MeatLoaf!!!
1 lb ground beef
1 cup soft breadcrumbs
1 egg
2 tablespoons finely chopped onions
4 ounces applesauce
1 teaspoon Dijon mustard
1 dash pepper
Filling
1/2 cup applesauce
1 tablespoon brown sugar
1 tablespoon vinegar
1 teaspoon Dijon mustard
Combine meatloaf ingredients and shape into a round loaf in a 8 or 9" baking pan.
Make a depression in the middle of the loaf.
Combine filling ingredients& pour into depression in loaf.
Bake at 350 for one hour.
If necessary, pour off grease before serving.

Meatloaf Burgers With Quick Ketchup
Serves 4
For the Burgers:
1 teaspoon olive oil
1 pound ground beef
1 small onion, grated
1/4 cup fresh parsley, chopped
1/4 cup plain breadcrumbs
1 large egg, lightly beaten
2 tablespoons crushed tomatoes in sauce or ketchup
1 1/2 teaspoons Dijon mustard
1 1/2 teaspoons Worcestershire sauce
Salt and fresh ground pepper
For the Ketchup:
1/2 cup crushed tomatoes in sauce
1 1/4 teaspoons light-brown sugar
1 1/4 teaspoons cider vinegar pinch of ground cloves
Pinch of ground cloves
1. Preheat oven to 450°. Brush a baking sheet with oil; set aside. Make the burgers: In a medium bowl, mix beef, onion, parsley, breadcrumbs, egg, tomatoes, mustard, Worcestershire, 3/4 teaspoon salt, and 1/8 teaspoon pepper with your hands, just until combined. Do not overmix.
2. Divide beef mixture into 4 equal portions. Form each portion into a 4-inch patty. Place on prepared baking sheet. Transfer to oven; bake, flipping patties once, until cooked through, about 14 minutes.
3. Meanwhile, make the ketchup: In a small saucepan over medium heat, stir together tomatoes, brown sugar, vinegar, and cloves. Bring to a boil, reduce heat, and simmer until thickened, 2 to 3 minutes. Spoon ketchup over meatloaf burgers, and serve.

Everyone raves over my meatloaf.. but I eyeball it I don't have a set recipe as I came up with it myself.
I'll try.
2 pounds ground beef
( I usually use ground lean sirloin, you could certainly use chicken or turkey or a mixture of ground beef, veal or pork)
1 small diced onion
1/2 green bell pepper , chopped
1/2 cup of bread crumbs
1/4 cup of catsup
1 egg
2 TB bbq sauce
2 tsp soy sauce
1 TB brown sugar
Mix above ingredients. Form into a loaf or pat into loaf pan.
For the glaze I use 1/2 cup of ketchup, 2 TB of brown sugar, 1 tsp of bbq sauce and a few shakes of soy sauce.
Bake at 350 for 45 minutes or until it reaches 170 degrees internally.
It's really good. Especially the next day for meatloaf sandwiches.

My Mom found the one on the back of the Lipton soup mix, probably while making onion dip, and we have used that one ever since. I rolled it up one time with chedder cheese in the middle, it tasted like a cheeseburger with onions. Yum! I halve the ingredients for a one pound loaf, I'd be eating leftover meatloaf for weeks if I used two pounds of burger!
And the leftovers are great, my Dad put it cold on white bread. I heat it up, and pour on the ketchup. To each his own.
The recipe is probably on line at the Lipton company site. It's
eggs, water, ketchup, ground beef, Lipton's, and bread crumbs. Mom used to use oatmeal instead of the crumbs. I do not know why.

Nancy's Moist, Salisbury Meatloaf with candied ketchup topping
Preheat oven to 375
Loaf mix:
1.27 lb meatloaf mix: beef, pork, veal
1 pkg instant beef gravy
2Tbsp or half a package of onion soup mix
1 cup bread crumbs
1/3 cup evaporated milk
3 eggs
¼ cup chopped onions
Topping:
A½ cup ketchup and 2 T sugar
Mix evaporated milk and bread crumbs and let sit while you crack the eggs. Add eggs, gravy mix, onion soup mix and mix evenly. Add onions and hamburger. Mix gravy/eggs/bread crumbs mixture so itâ€â¢s evenly mixed with the hamburger. Put nonstick foil in cake pan or baking dish, nonstick side of foil up. Fold up foil sides and corners to catch drippings. Topping: Squirt ý cup ketchup on top of loaf. Add 2 Tbsp of sugar and blend together so sugar is blended into ketchup. Bake 40 mins or until top is set/thickened, sides are starting to brown. You can always cut the meatloaf in half to make sure itâ€â¢s done to your desired doneness. My loafâ€â¢s ketchup topping was not bubbled/candied as I usually let my other recipes get before I take them out of oven, and it was done inside even though the sides were only slightly browned. My other recipes were browned more. This meatloaf gets a slight crusty bottom which is not bad and easy to cut through. I loved the texture, moistness and flavor of this recipe. I forgot to add salt and pepper but it tasted fine w/o it. And you can add that when served. I was pleased with this recipe. I used other recipes to develop this one but the end result was my own concoction using other recipes for a meatloaf that resembled frozen Salisbury steak meat that was moist, gravy-like.

take a pound of burger and add about a quarter of a pack of crushed ritz crackers, diced onion and garlic to taste, black pepper one or two eggs about a quater cup catsup or ketchup just about 11/2 or 2 teaspoons of worcestershire sauce and mix well by hand in a bowl. now in a non greased laof pan add aprox. half the meat and make a shallow depression in the length of the center. in the depresion add one too two cups of instant potatoes with a few small drops of butter on top. take the rest of the meat and close off the top of the loaf .try to work the sides and ends of loaf together without destroying it. it helps if you place the meat in the freezer for fifteen or so minutes before you start as the meat will get looser as it warms. i also like to use a little higher fat meat,it's about flavor not health with a meatloaf anyway. bake using your own technic for your over, durring last fifteen minutes of cooking run strips of catsup on top of loaf and finish cooking. allow to stand for five minutes before cutting. Stuffed Meatloaf!!! YUM

Confetti Meatloaf
INGREDIENTS:
3/4 cup evaporated milk
2 cups soft bread cubes
1/4 cup chopped onion
2 pounds lean ground beef
1 1/2 teaspoon salt
2 eggs, beaten
1 teaspoon dry mustard
1 1/2 cups frozen mixed vegetables (10 ounce package), thawed
PREPARATION:
Pour milk over bread cubes and let stand until milk is absorbed. Stir in onion, ground beef, salt, eggs, and dry mustard; blend well. Stir in vegetables. Mix and shape into a loaf. Bake in loaf pan at 350° for 1 1/2 hours.
Cool for 5 minutes before turning out of pan.

Simple- 1-2 lbs 80/20 hamburger, mix with a sleeve of crackers and 2 eggs. Put in greased loaf pan. Can add cheese if desired (cubed). Bake 25 min at 350, add half bottle ketchup to top. Bake additional 10 min. Yummy.
