Chinese cooking isn't so hard. Here's my sweet and sour chicken recipe that my husband and I just love.....he has even made it a few times and he doesn't know much about cooking!
Sweet and Sour Chicken
Ingredients:
2 Whole Large Chicken Breasts, boned, skinned and cut into cubes
1/4 cup cider vinegar
2 tablespoons brown sugar
1 tablespoon cornstarch
2 tablespoons soy sauce
2 tablespoons water
1/2 teaspoon salt
3 tablespoons vegetable oil
1 medium-sized onion, sliced
1 20-ounce can pineapple chunks in juice
Either cut raw boneless chicken breasts into bite sized cubes and cook in the vegetable oil in a wok, or cut already cooked chicken into bite sized pieces.
Combine cornstarch and the water and cider vinegar in a small container and set aside (don't add all the liquid to the cornstarch all at once, just a little at a time while stirring and it will be of equal consistency)
Add brown sugar, soy sauce, salt, onion and pineapple with juice to the chicken in the wok. Cook and stir over medium high heat for a few minutes until the onion slices begin to cook, then add the vinegar/water/cornstarch mixture and stir and cook until the onions are done the way you like them.
That's it! You have sweet and sour chicken!
Also, I like to make chicken fried rice. That's even easier. Go to your local grocer and buy a packet of stir fry mix(same size as a packet of gravy mix). It's usually in the oriental section. You'll need rice (already cooked and refrigerated for about a day), soy sauce, chicken, green onions, and if you like you can add frozen peas and carrots. Follow the directions on the stir fry packet and you'll have chicken fried rice! (you can use other meats as well if you prefer)

Asian Cookery Companion is a big thick book and its available in all book stores. It virtually has all chinese recipes as well as indian, malay, thai and lots of others. It costs $50 Australian. A very useful book for cooking chinese. Also lots of tips and ideas in preparation. The reason chinese food tastes differently in takeaways is that they marinate the meat several hours before cooking.

Well if you want it to taste like the Chinese restaurants, overcook the hell out it and douse it with MSG.
I wouldn't exactly say eating the sweet and sour dishes are healthy.

Hahahah i have not cooked a chinese yet but like one of the answers here. so funny.
Beef-teryaki;
Green pepper, 1or2 medium carrots 250 frying steak or 2 breasts of chicken. 1 tablespoon cooking oil. 1 clove of garlic. 2 tablespoons soy sauce. 2 teaspoons honey.
Cut pepper in half, discard seeds and stalk. Slice flesh into thin strips. Peel carrots and slice very thinly. I do it with a potatoe peeler. Trim excess fat from steak and cut steak into strips of meat. heat oil in frying pan, fry carrot and pepper for about 2 minutes. The veggies should still be crisp and a good colour. Remove from pan and keep warm. Add crushed clove of garlic to frying pan and brown meat quickly on both sides. Mix together soy sauce and honey and add to pan. Fry for 4-5 minutes until meat has a glazed appearance. Add cooked pepper and carrot and toss together with the meat. Serve on rice.
Best i can do , sorrryyyyy. But it still taste nice.:)))

Get a copy of "Chinese Home Cooking" by Helen Chen, she is the daughter of Joyce Chen who has a line of cooking utensils and ingredients. Joyce has passed away and the book is dedicated to her. It's a great book for a beginner and "Home Cooking" is the key, all the recipes can easily be prepared in your home kitchen. Directions are clear and concise. HAVE FUN!

The best way to learn is to take a local municipal cooking class !! Next is to watch any of the number of fine cooking shows : "Yan Can Cook" is a great example.
Buy a wok, a rice steamer, and a good knife... find some recipes and practice practice practice...

Sweet and sour sauces are easy to make with ketchup, honey and vinegar.
Try looking up a few recipes on the UKTV Food Site. Experiment and have fun. A good thing to make are won-tons. You can buy the wrappers in the Chineses supermarket and then spice up pork mince or vegetables with 5 spice powder. Then cook them in the steamer. Serve with sweet chilli dipping sauce.

No one knows how to cook Chinese except the Chinese! I can do Indian so that you won't know the difference (unless you are Indian), but Chinese defeats me. I too need the taste! Three possibilities occur to me;
1. They are using huge quantities of oil, so much that we would fear to use it.
2 .They pour a sack of MSG over it before we get it.
3. 1 & 2 plus the addition of on addictive drug unknown to us westerners.

Buy a wok and stir fry your veggies and meats! You can get away and do it in a frying pan too with a non-stick coating. Use Pam or light oil for stir frying. Pick up Chinese cookbook and enjoy your new taste buds! Enjoy!
